Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottle. Black beer with a low tan head. Boysenberry and chocolate aroma. Boysenberry and vanilla flavor with chocolate, bourbon, and red wine. Fuller bodied. Boysenberry and chocolate linger with vanilla, bourbon, and red wine.

12.7 oz bottle from Reserve Society. Aroma has notes of banana, bread, floral, alcohol. Pours hazy rosy red with a one finger pinkish-white head with decent retention. Taste is savory, slightly sweet, moderately bitter, boozy, and a hint of tartness.

12.7 oz bottle from Reserve Society. Aroma has notes of overripe guava, passionfruit, wood, marzipan, vanilla, ash. Pours murky burnt orange with a one finger beige head that falls into a ring after a minute. Taste is highly sour (8/10) with flavors of tropical fruit and oak.

Bottle from Utobeer, Borough Market. Aromas of peach, apricot, vanilla, cinnamon, pineapple. Taste is coconut, peach, sweet spice, almond paste, vanilla, sweet tobacco, bourbon. Humungously warming & complex & exceedingly flavoursome. Top notch.

On a three beer flight in the Pizza Store by OC Local; 5th September 2025. Bright light golden body, snow white crown. Crisp and very enjoyable Pilsner, refreshing after a two mile walk to the venue in the afternoon sunshine and heat.

12.7 oz bottle. Aroma is chocolate malt balls (Whoppers), coffee, dark bread. Pours dark brown to black with a one+ finger beige head with decent retention. Taste has a firm roasty bitterness with some light sweet malt backing. Strong coffee flavors. Perfectly carbonated velvety mouthfeel.

12.7 oz bottle. Aroma has notes of chocolate, vanilla, nuts, dark bread. Pours inky black with a one finger tan head with good retention. Taste is moderately sweet with a firmly bitter roasty edge. Velvety perfect mouthfeel. Smells like a brownie, tastes like a brownie, but that just right bitterness lets you know you’re still drinking a beer. Not a sticky sweet cloying mess like so many pastry stouts out there—this is how it’s done.
