Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

2025 edition from Reserve Society. Aroma is chocolaty, woody, bourbon, molasses, licorice, pouch tobacco. Pours very dark brown with a half finger beige head that settles into a ring quickly. Taste is moderately to highly sweet with some firm bitterness that attempts to rein it in. There’s a sense of saltiness, but it doesn’t stand out like a good salted chocolate does—it’s sadly just a hint of it, and what I was hoping for here. Chocolate Salty BBLS is an extremely rich sipper and pretty decent but I was hoping for more.

Cloudy Amber color and an White head. Nose Is sweet malty, Vanilla. Taste Is decent boozy, sweet malty, Vanilla, Creme brullee. Sweet and heavy

I have a 12.7 oz bottle on this sampling. Lightly cooled, this one is going inside of my favored Trappistes Rochefort glass. Fragrant nose, there is dried fruit, grain, malt and candi sugar. The taste, well it is pretty fine, tough competition in the universe of quadrupels. It follows the classic taste of the style. Dates, bread, malt, a hint of black raisins, caramel, citrus peel, perhaps some clove and a bare bit of red cherries. Interesting beer. Nice.

Lighter shade of black topped with a khaki head that dissipates edgewards.
Nose is big billy bollocks barrels, spice, booze, liquid fruit cake, dates, figs.
Taste comprises dark malts, spice, booze, vinous, port barrel suggestion, figgy jam, ripe bourbonics, spice.
Full bodied and fucken have some more, fine carbonation, light drying close with a good rising boost.
Solid BA kit.

12.7 oz bottle from Reserve Society. Aroma is licorice, chocolaty, molasses, woody, bourbon, vanilla, coffee, nutty. Pours opaque dark brown with a half finger beige head that falls into a ring quickly. Taste is sweet with flavors like the aroma of. The coffee is there if you search, but it’s subtle. Delicious though.

A mild haze on this dark brown beer, a very small tan head lasts an even smaller time. Palate is remarkably light and crisp for the very hefty abv. The dark malt base is light but rich with malt cream and both dark and milk chocolate. A decent amount of oak induced vanilla. Who knows what the triple barrel is but, I am getting a lot of tawny port, a little sherry and of course some bourbon and bourbon soaked ripe fruits. All tangy and rich. Light smooth finish leaves a mild alcohol spice linger. Super duper, like a black champagne on maximum steroids. A wonderful example of what beer can be.

Bottle at home 24/7/10... huge thanks to Chris for this one ... deep black ... no head ... barest lacing ... huge bourbon vanilla nose .... deep roast ... too much bourbon ... big vanilla ... nice but too rich ... too much bourbon... littled chocolate ... sweet toffee
