Description
The Bruery® is a boutique craft brewery based in Orange County, CA, specializing in experimental and barrel-aged beers since 2008. Founded as a small, friend & family run business, The Bruery takes it’s unique moniker from founder Patrick Rue’s family surname.
Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

750ml bottle shared @Luppolo Station (Rome). Corpo pieno, carbonazione leggera. Un missile.

Thanks fonefan! Pitch black colour, small off-white head. Aroma is inky, some mild chocolate, alcohol, toasted and liquorice tones with a lot of burnt sugars. Flavour is chocolate, some burnt sugar, quite burning alcohol, but also a bit toffee, vanilla and some wooden tones. The alcohol sweetness along with the chocolate syrupy tones does stay even in the aftertaste, so this one sadly is lovely, but at the same time a bit too burning hot as for the alcohol.

Thanks fonefan! Pitch black colour with a tiny head. Aroma is liquorice, alcohol, some syrup and mild vanilla tones with some oaky and a bit dried fruity tones too. Flavour is liquorice, vanilla, some syrup, chocolate, alcohol and dried fruits with mild wooden elements too. Alcohol is quite burning on the gums, but otherwise this one is a nice one.

Panda at home, thanks to Kenneth, 26/04/2026.
Black topped with a khaki cap that veers to the edge.
Nose is port barrel, vinous, red berry twang, chocolate, tangy fruit rinds, molasses.
Taste comprises chocolate shavings, big port, red wine barrel, dried red berries, molasses, spice, warming alcohol, fruit cake mix, a trace of bourbon hiding in there.
Full bodied, fine carbonation, drying close with a balanced rising boost.
Solid sipper ... weighs in pretty easy for the 19.8% ... delivers on all the flavour promise but packs a punch to remind you it's a ballsy bastard.

Pint can, 2021 vintage. Cinnamon aroma with notes of boysenberry, roasted malt, chocolate, vanilla, oak and bourbon. Pours deep brown with a thin mocha brown head that has some retention and decent lacing. Starts with roasted malt, chocolate, oak and vanilla flavors as well as having a rich, full body and silky smooth mouthfeel. Finishes quite smooth with boysenberry, cinnamon and bourbon flavors. Good balance of the fruit and the roast for a decadent, tasty treat.

I’ve got a 12.7 oz bottle out of a Black Tuesday collection obtained from the brewery. I thought the brandy barrel version was great so now time to see what a red wine barrel accomplishes. Using a large snifter for the sampling, I pull the cap and pour. A totally dark, one shade brown short of black body, completed by a ring of light tan foam. The scent has a good beginning. Chocolate malt, a not unexpected slightly sour wine effect and wood. Lift the glass for a drink. My gosh, this is tasty. I get imperial stout, a Belgian ale and red wine in one. Dark chocolate, scorched toast, dark plums, a floral touch, lots of booziness, raisins, malt, earth and oak. Potent fo sho. I like this brew considerably. I will say that The Bruery can kick out some fine beers.

Bottle. First rate in 6 yes - huzzah! Pretty much a clear darkish amber beer, good bubbly pale tan head. Airy palate, semi dry, good fine minerally carbonation. The malts might betray a spot of age, hard to tell and quite subtle with a hefty beer like this. Good tangy caramel - toffee, not that sweet at all. Mild malt cream. A fair dose of wet wood barrel, mild vanilla. Then the Madeira kicks in with its rich ripe fruity sweetness. A touch of alcohol spice in the semi dry finish. Very Madeira and, like so many Bruery high abv beers, hard to discern any real age.

US Pint can from Kura’s Krafts, Kuala Lumpur, Malaysia. Poured a crystal clear yellow golden colour with a lasting frothy white head. The aroma is yeasty, bready. The flavour is moderate bitter, with a crisp, malty, light aromatic yeasty, hop bitter palate and a lingering bitter finish. Medium bodied with average carbonation.
