Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

The Bruery puts out some fine imperial stouts while I like their Belgian ales even more. So it is an Belgian style imperial milk stout this time, the best of all worlds. For this sampling my ABGB snifter is prepared to receive a pour from the 2024 edition 12.7 oz bottle. I determine a plenty-dark-enough brown body topped by a steady cover of khaki tan foam. The scent is fairly nuanced with chocolate and grain, not really striking. The taste is somewhat of an improvement. Chocolate certainly, malt, pecans, some roastiness, wheat bread, comparable amounts of sweetness and bitterness and an appreciated thick sensation. There are others better in the 12 Days of Christmas compilation.

Is neopolitan ice cream supposed to be mostly 🍓? Cause that's what is packing heat here, even pouring it the room fills with 🍓. I haven't had neopolitan ice cream in probably 20+ years, the flavor here is nice though as a 🍓 stout. Also hints of booze.

This is a 2024 edition 375 ml bottle from the brewery direct as part of their 12 Days of Christmas compilation . A quadrupel, that is good; gooseberries, that will be new to me. My New Belgium large tulip glass is ready to receive, the cap is off and I pour. The color is a dark gold-brown much like the La Trappe quads and carries a healthy head of eggshell tan foam. I will say that the scent is mighty fine, there is hard candy, yeast, ripe fruit and baked bread. The taste is good, not to the level of the nose, it's too sweet. But that is minor point in the grand scheme of things. There is grain, malt, berries as advertised, honey, yellow plums, vanilla and a touch of dates. Slightly bitter at the end. Not a great quadrupel but it is still quite all right. I would buy again if I could ever find it.

Black colour, small brown head. Liquorice, chocolate, mild syrup with some toasted and alcohol tones. Flavour is dried fruits, alcohol, some toffee and mild toasted tones.

Deep amber colour, small head. Aroma is wood, sweet malts and some dried fruity and mildly spicy tones. Flavour is wooden, some spicy, mild dried fruity tones with some alcohol to it.
