Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottle shared at craft beer junction bermondsey tasting. Many thanks. A dark black mahogany brown coloured pour with a halo of beige head. Aroma is semi sweet, sticky liquorice, black jack, salty roast, sticky brown sugars. Flavour is composed of semi sweet, sticky, tangy, lemon, liquorice, salty, alcohol. Rum barrel, spicy.. Little harsh.

CBJ bottle share, thanks to me for the bottle. Near clear dark brown beer, small bubbly tan head. Airy palate, semi dry, decent fine minerally carbonation. Light bodied dark malts, a mild dark chocolate. Good cinnamon spice, powerful but tempered by the bold rum barrel, tangy and fruity. Finish light and spicy and slightly medicinal. Intense, off its tits and thoroughly entertaining.

Really, truly, the website should separate Belgian Ale - Strong between pale and dark, very different. Just saying. I lifted this 12.7 oz bottle out of the 12 Days of Christmas assortment purchased from the brewery last year for a side-by-side comparison with the barrel aged version this past weekend. Didn’t happen so the rating takes place tonight. I have my Delirium snifter ready, I pull the cap on the bottle and pour. The appearance is a clearish dark gold finished with a slender skim of silvery foam. I smell ripe fruit, straw and grain. Now for a drink. Pretty decent, one of the few times I think I like the regular version more than the barrel aged one. Fairly sweet apricot, malt, pineapple, white bread, Granny Smith apple and field. Some spiciness but not too much. Nicely dense. Damn, the folks at The Bruery can put together some fine beers.

On tap at BeerTemple. Pours black with a beige head. Tons of burnt sugar, blackstrap molasses, hazelnuts, and bourbon barrels on the nose. Flavour has a fairly rich malt profile, lots of molasses and dark sugars, hazelnuts, and a very bourbon-y finish. Very nice.

The fifth beer in the 2020 bourbon barrel aged collection purchased from The Bruery. This 12.7 oz bottle is open and going into a Trappistes Rochefort glass as we speak. The body is a hazy pale gold with a minimal head of small bubbles but the carbonation is almost fierce. I smell yellow fruit, white bread and alcohol. But the point of all this is the drink so I take one. The taste is unique, I have not encountered a brew that is close. Almost ripe somewhat sweet nectarines, malt, a bit of pineapple, spice to some degree, cinnamon I think mostly, a touch of sourness and a pronounced boozy background. I call this one interesting, very drinkable, but not near to being the best of the collection.

Bottle shared at mini-tasting. Opaque jet black color, average sized brown colored head. Aroma is malts, heavy barrel, port I guess. Flavor is malts, vanilla, barrel / port, dark malts, sweet, boozy. Velvety mouthfeel, thick texture, average carbonation. Very solid.
