Description
The Bruery® is a boutique craft brewery based in Orange County, CA, specializing in experimental and barrel-aged beers since 2008. Founded as a small, friend & family run business, The Bruery takes it’s unique moniker from founder Patrick Rue’s family surname.
Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Blind tasting at Papsø’s
Hazy amber color; small head. It has a very light aroma (sweet caramel, oily French Fries); the flavor is better, sweetish caramel, with Bourbon vanilla; there is a late sourness that doesn’t fit in. Too high bitterness. I guess they wanted to make a barrel aged Quadrupel, but it came out too chaotic.

Bottle, 75cl. Thx to Papsoe. It pours a clear, copper body under a beige head of moderate size. The aroma has canned fruits syrup, mostly peaches, with hops, alcohol and caramel as well. Sweet, syrupy flavor with alcohol, some spices and a phenolic touch. Full-bodied and warming. Long, warm, sweet finish. A rather nice beer, but on the sweet, syrupy side. It’s sort of like candy with alcohol. (090508)

From bottle, blind #13. Pours hazy orange to brown with a small tan head. Dry caramel malt, slight oxidised note in the aroma. Overripe fruity too. Sweet, fruity, yeasty and light oxidised flavoured. Mild acidic touch. Vague metallic. acidic and dark roasted malt flavoured finish.Lasting spiced and yeatsy into the far finish.

Cask @ Ginger Man poured into an Imperial Pint (awesome!!). Has the agitated beer, bubbly with no substance small head that comes off a cask. But it has a beautiful hazy, glowing, orange-golden color. Aroma is bretty, lemony, and sour, mmm I like. Its very strong on the tangy, tart lemony brett, which reminds me a lot of young Canitllon lambic. Taste is not as strong but the lemony brett really kicks in at the end of the flavor. Its lightly drying and lots of tart, sweet-less miscellaneous berries sprinkled throughout. Definitely reminds of kegged young Cantillon gueze. Has that undercarbonated cask mouthfeel. I would really love to see the final product when these get blended and bottled in the future.

Last of the keg from the Anniversary Party. Pours with a huge khaki head over a hazed to murky amber body with sediment. Aroam is rich and has winter spices, sourness, bakery, persimmons, wood, and caramel. Taste is nice and tart, with vanilla oak, a decent amount of residual sweetness and a nice fruitiness. Lively carbonation with a dryish mouthfeel.

On tap at the Bruery. Vastly different than the Virgin Papier. Pours a dark hue which is a deep auburn, slightly clearer with a khaki head. Aroma of vanilla, cinnabun, light tannins, plum, prunes and banana. Taste is wood (nearly like a medical tongue depressor), whiskey, brandy, dark fruits, and a slight bitterness. Creamy carbonation and a full bodied mouthfeel.

On tap at the Bruery. Pours quite hazy with a red hue and no head. Aroma of belgian yeast, toffee, plum and honey. Taste is dark fruits, plum, apricot, honey, banana and some bitterness. Somewhat noticeable alcohol. Light but prickly carbonation.

On cask at the Bruery. Pours with a hint of head over a hazed golden body. Aroma is quite nice for a mead lover with florals, honey, eucalyptus, caramel, toffee and wood. Taste is awesome with a real presence of the barrel aged wheat wine and a nice herbal honey and butteryness. Alcohol is kept under control, but there is a light oxidation, although it doesn’t detract from the experience. Syrupy mouthfeel and very light carbonation...excellent braggot!

On tap at the Bruery. Pours with a small off-white head, over a hazed golden body. Aroma is phenolic with brett, spicy and full of bread. Taste is buttery and earthy with tons of brett and tripel spiciness. Quite different than the Thai Basil dominated regular trade winds... Maybe better, maybe worse. Dry mouthfeel, but refreshing.

Tap at Stone Bistro. Pours amber/orange, white head. Aroma is hoppy, light spices and herbal notes. Taste, some funk? phenolic / Belgian yeast, herbal hops with thin malt. Crisp finish.
