Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Bottle at home in London. Pours dark brown with a small, creamy beige cap. Dirty, earthy roast in the nose, some dry cocoa, very subtle coffee notes. Light sweet flavor, dirt, some crisp minerals, dark toast, modest baking cocoa. Light bodied with average, creamy carbonation. Lightly drying to finish, more baking cocoa, mineral quality, burnt leaves, restrained earthy bitterness. Well rounded stuff.

Bottle at home in London. Pours rich brown with a strong, beige foam head. Lots of rich pine in the nose, dark roast, gritty dirt. Light sweet flavor with aggressive bitterness that easily outmatches the sweetness. Plenty of sticky, burnt pine, dirt, scorched earth. Light in body with average, creamy carbonation. Sturdy, resinous finish, strong roasted malts, heavy dirt, earth, bitter cocoa. It’s a very rich beer, but most of that richness derives from the hops, which lends the beer a somewhat unbalanced feel. Still, some good stuff happening here.

From tap at Borefts. Pours hazy dark brown with a small tan head. Aroma is dense malty, caramelish and roasted. Dense maæty, roasted and dry caramelish. Breadish and dark malty finish.

Draft at Borefts. Hazy yellow color, medium white head. Aroma of lightly spiced straw and citrus. Taste is spiced fruit, hay. Nice.

Draft at Borefts. Hazy amber maroon color. Aroma of boozy figs and caramel. Taste is also boozy, caramel, toffee, dark fruit.

Bitter roasted malt aroma. Body is thin but quite slick. Has a slightly smokey taste. Nicely dry and bitter. Big taste for low alcohol.

Draft @ Borefts 2012. Clear amber, little white head. Smell is sweet, dark sugar, orange peel. Orange peel taste, some fruits, sweeter malts, brown sugar, marmalade. Medium bodied - agreeable.

Draft at Borefts. Pours hazy pale yellow with an off white head. Aroma of citrus, light hops, wheat and some spice. Flavour is light to moderate sweet and bitter. Medium bodied with moderate carbonation.

Draft at Borefts. Pours cloudy brown with a small tan head. Aroma of caramel, malt, fruit and some alcohol. Flavour is moderate to heavy sweet and moderate bitter. Medium to full bodied with soft carbonation.

On tap at Borefts Beer Festival, Bodegraven, Netherlands, Friday 28th September 2012 Hazy orange with white rim. Nice sweetness, soft in mouth, sweet citrus, little burn, very nice and I believe that this is my first from this brewery. A6 A4 T8 P4 Ov15 3.6
