Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

33cl bottle @ home. Opaque, pitch black color with a medium sized, fair lacing, light brown colored head. Smell malts, some coffee, a hint of hops and some roastyness. Taste is heavy malty, heavy bitter, roasted malts and burned coffee. Medium carbonation, medium body.

330ml bottle. Cloudy pale golden colour with average, firm, frothy, white head. Wheaty and grassy hoppy aroma finds itself mixed up to an herbal overall impression, minimally spicy background. Taste is fresh, sourish, dry, herbal, spicy, minimal citrus touch. Otherwise welcom’d hop aroma interferes with the typical Wit flavours.

330ml bottle. Black colour with small, creamy, moderately lacing, beige to brown head. Roasty and salty dark malty aroma with a touch of salami. Taste is roasty dark malty, dry to bitter hoppy, prickling carbonation adds its part to the dry character. Not overly complex, but straight to the point.

330ml bottle. Slightly cloudy golden colour with average, frothy, fairly lasting, white head. Intense floral, grassy hop aroma, a touch of citrus. Taste is dry to bitter hoppy, slightly floral, a touch of citrus. A bit watery in the middle part, but with lasting bitter hoppy finish.

Draught @ Borefts 12. Hazy pale yellow color like a Belgian white, small white head. Aroma is lightly malty, moderate to heavy hops, flowers, citrus. Taste malts, harsh bitterness and hops. Harsh bitter finish and that flavor lasts for a long time! Low to medium body, a bit dry texture, medium carbonation. Very nicely done considering the low ABV, but the bitterness is too harsh to really enjoy it.

Draught @ Borefts 12. Opaque, pitch black color, no head just a small off-white lacing on top. Smell malts, smokey paint and some peat. Taste malts, roasted malts, smoke, decent bitterness and some peat again. Low to medium body, low to mediunm carbonation.
