Description
Casita Brewing Company is owned and operated by Ryan and Mahalia Witter-Merithew. Ryan is a seasoned brewer, having worked as a professional brewer in Denmark, England, and of course, the United States over the last thirteen years. Mahalia is the heart of the business and the president of the company.
Casita started as a contract brewery at Hill Farmstead Brewery in Greensboro Vermont in 2015. In 2017, we moved this business to our home state of North Carolina, where we produced our beer at Duck-Rabbit Brewery in Farmville. In 2020, we are set to open our very own brewery and taproom in Mahalia's hometown of Wilson, NC. We will be open to the public by August 30th.
Over the years we have brewed over 50 different beers under the Casita name. Ryan is excited to bring this creativity to our new taproom, where we will be brewing some old favorites as well as some new beers we haven’t even dreamed of yet.
The logo for our brand is a letter 'C' in the shape of a little house. The 'C' of course stands for Casita, but it is our hope this 'C' will not only represent our brand, but a lot of our other favorite words that start with 'C', like craftsmanship, creativity, compassion, and community. These are the key principles of our business.

Bottle at tasting. Aroma of chili, herbs and nettle. Strange rich taste of lime, soft spicey chili, yeast, malt and some sweet ester that good be honey. Weird, but nice in a way.

Bottle 375ml. @ [ The Country Stat Improver Tasting ] - Saxo, Aarhus. [ As Casita Cervecería Tè Amo ].Clear dark brown color with a huge, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, dark malt, sweet malt, roasted, tea, lavender, herbs, spicy, wood notes. Flavor is moderate to light heavy sweet with a long duration, sweet malt, candy, spicy, lavender, tea, note of sourness (lactose). Body is medium, texture is oily to watery, carbonation is soft. Sample at CBC 2016 Green Session. Hazy, pale yellow with white head. Malty, lightly tart, yeasty with hay, a bit of lemon and grape. Very light.

Bottle: Poured a hazy bright yellow color ale with a large foamy head with good retention and some lacing. Aroma of tart notes with some lime and dry floral hoppy notes is quite enjoyable. Taste is a nice mix of lime with some tart notes with dry hoppy floral notes which are well integrated. Body is about average with good carbonation. Super nice level of drinkability with some quite complex notes.

375 ml bottle, purchased at Hill Farmstead. Bottling date of 10/11/16. Hazy golden appearance with standard amount of carbonation leaving thin white head and lace. Aroma shows mild pumpkin, light herbal hints and some lactic sour notes.
The pumpkin and herbal notes are very subtle in the flavor, the main character in this beer is a light sourness that lingers through the entire sip. Perhaps Brettanomyces induced. Lighter in body with standard level of carbonation.

Thanks Dr Moll for sharing the bottle! Poured into a snifter showing hazy cloudy yellow with sparse white foam. The nose shows a strong bretty forwardness. The palate is light bodied and lightly carbonated. Strongly tart with a bretty forwardness and light sweet notes of pumpkin on the aftertaste and resurgence.

A hazed golden saison with a thin white head. In aroma, sweet fruity malt with light Brett notes, coriander, light Epsom salts, resinous and piney hops, very nice. In mouth, a nice sweet fruity malt with light banana esters, cloves, resinous hops, light Epsom salts, light Brett, very nice. Bottle from Boutip, at GRMs tasting.

Poured into a tulip, the appearance was a rugged semi-dark ruddy amber color with a quickly dissipating foamy little head. Dissipates into oblivion without regard for any lacing.
The aroma starts with some tart cranberries and fresh sage. Slides into some hibiscus, light cherry, some orange peel.
The flavor leads with a delicate sour to tart blend of the cranberries to the floral and herbal nature of the hibiscus and sage. Orange peel seems to slide further to the back. Semi-sweet dry sour aftertaste running into the finish.
On the palate, this one sat about a light to medium on the body with a contained sour to herbal sweet smoothness somewhat sticking to my tongue.
Overall, nicely done sour/wild ale, definitely could be one to have for people just getting into the style.
