Hedonis Ambachtsbier werd vanuit een passie opgericht in 2015. Hedonis verwijst naar de term Hedonisme, de filosofische leer waarbij streven naar genot het hoogste goed is. Ambachstbier verwijst naars de Engelse tem “craft beer”, een explosieve stroming van experimentele bieren. Het doel van Hedonis Ambachtsbier is de consument intens te laten genieten van innovatieve bieren gebrouwen met respect voor de Belgische biertraditie.

Wij staan zelf in voor het volledige proces van het bedenken van de recepturen tot het uitleveren van de bieren. We willen de grondstoffen, eindproducten en de consument met de grootste zorg behandelen en streven naar de beste kwaliteit en service. Om onze consumenten correct te kunnen informeren vindt u op alle etiketten de brouwlocatie en de brouwtechnische gegevens terug.

In 2022, we decided to join forces with Siphon Brewing and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

23/IV/19 - 33cl bottle from Geers (Oostakker), shared @ home, BB: unreadable print - (2019-586)
Clear dark brown beer, big irregular foamy beige head, pretty stable. Aroma: lots of vanilla, caramel, malty, grains, cow fodder, soft roast, milk chocolate. MF: ok carbon, medium body. Taste: sweet start, little bitter, caramel, vanilla, bit metallic, cinnamon. Aftertaste: some coconut, bitter, a bit dry, roasted, caramel, more cinnamon, soft acidity, dry bitter finish.

Bottle from Dranken Geers, Oostakker. Pours hazy black with a lasting, very thin, frothy, tan head. Aroma of coco flakes, milk chocolate, vanilla custard, burnt caramel, brownie dough, liqueur-drenched raisin, fig, ripe plum, mocha, vague iodine (band aid). Taste is medium malty sweet, chocolate & (burnt) caramel in balance, sweet tobacco, restrained coconut & vanilla; light to medium roasted bitter then, mostly coffee roast & fondant, chicory & black tea perhaps, cinnamon almost absent. Dryish, toasty finish, bit herbal hoppy, lingering chicory coffee, chocolate, some coco flakes again. Medium body, slick-oily texture, fizzy carbonation. Too bad about the off-note in the aroma initially; apart from that, well-made, hugely drinkable of course (the 2018 edition was even hard to finish a whole bottle of). Indeed, too little of the promised ingredients (especially cinnamon), but we'll overlook that for now.

330ml bottle bought at Baixa Brewing. Rocky white head, remaining over a misty yellow-gold body. Lacing rings down the glass. Mid-sweet grainy fruits on the nose. Flavoured with canned fruits and oily hops. Ends mid-sweet fruity. Fine depth. Quite alright. (Hotel room, Albir 13.04.2019).

Bottle, 330 ml, courtesy of JFK10000. Shared with him and Max. Caramel, malty, some chocolate, cocoa, sweetish, bitterish finish. Bit watery. Medium bodied.

Huge thanks to JefVerstraete for that one! Bottle looks simple but good. Beer in the glass zippy, nice head. Dry malty aroma. Starts dry malty, bitter notes, a bit metallical. Light hoppy-bitter. Finish could be more balanced. Okay.

Huge thanks to JefVerstraete for that one! Bottle looks interesting. Beer in the glass light golden, small head. Fresh fruity aroma. Starts fine malty, spicy, light sourish-soapy. Some hoppy-fruity notes in the background, some lemon, still light sourish. Finish could be more balanced. Okay.

This year’s version of Hedonis’ stout, brewed to a different recipe each year for four years now; this one is a medium strong dry stout with cinnamon and coconut. Bottle at Trollekelder. Pale greyish beige, medium thick, mousy, papery lacing head over a very dark nut brown beer, as good as black but with hazy mahogany brown edges. Aroma of toasted nut shells (and I guess toasted coconut), coffee grounds, raw bitter cinnamon rather than the sweet-perfumey cinnamon I was hoping for, Ersatz chocolate (‘koetjesreep’), dead tree leaves and dry earth, nutmeg, iron pipes, bayleaf, chewing gum, liquorish, tea, dried apple peel. Restrainedly sweetish onset with a thin umami accent, generally dry as promised, with lively carbonation; toasted nutty and bit hard-caramelly maltiness with somewhat metallic edges, something bubblegummy lingering as well. Roasted chicory bitterness in the end, again very little cinnamon and coconut unless in respectively raw and toasted form, however the coconut does appear retronasally in the very ending (even after swallowing), coming in as a nice surprise; in all, this year’s Kiss My Stout has a leafy, bitter ending, with peppery hops accentuating the roasted bitterness. Dry stout indeed, roasty but smooth and going down easily, but I was hoping for much more expressive sweet cinnamon and coconut aromas, as these are very much understated at least in the sample I had.

En intégrant de l’épeautre comme malt, du Magnum et de l'Hallertau Blanc comme houblons et en utilisant de l'houblonnage à cru, il y a plutôt de l'idée dans cette Hedonis. L'epeautre à tout de même comme défaut de procurer une petite acidité qui n'est pas faites pour me satisfaire mais qui ne déplaira pas à tout le monde. Celle-ci empêche tout de même aux arômes de bien s'exprimer ce que je trouve dommage. Sur le visuel, c'est très sympathique avec un blond doré limpide (EBC de 10) surmonté d'une mousse généreuse et crémeuse. Le nez est agréable sur un mélange de céréales, d’ananas, de raisin, de citron, de coriandre et herbacé. Une belle amertume entoure l'ensemble. L'attaque est acidulée sans être de trop acide. On y retrouve les arômes présents au nez, toujours avec cette belle amertume. La deuxième bouche est à la fois plus amère, mais également plus acide. Les arômes fruités, relativement complexes de l'Hallertau Blanc n'y survivent pas. On est alors surtout sur un duo pamplemousse/citron moins intéressant. L'arrière bouche en est la copie conforme avec une prise en bouche trop limitée. La troisième bouche retrouve quelque peu de la stabilité avec une expression de l'Hallertau Blanc plus affirmé avant que ce dernier se retrouve bâillonné sur un final où l'acidité réapparaît. Le final, porté par un alcool à 5 % quelque peu limite est un peu court. L'amertume avec un IBU de 35 est très bien dosée, aidé en cela par un sucre léger. Cette Hedonis en reste agréable et appréciable, et sera même très appréciable pour ceux qui apprécient l'acidité.

Bottle in Huis De Cluuse, Brugge on 2nd Feb 2019. Slight haze to the golden body, full white head on top. Yeasty aroma and taste with some light spiciness and hop action with a little citrus peel for bitterness. Interesting and enjoyable.

Tap at Mother Kellys, with Angus, 7th February 19. Pours very dark brown. Aroma is chocolate, coffee. Taste is chocolate, coffee, good level of heat from the chilli. Very nice.
