Hello, we’re Thistly Cross, Scotland’s award winning farmhouse ciders, born out of a passion for making cider in the best possible way, combined with belief in the quality of Scottish produce, and asking ‘why not?’. Established as a collaboration between farmer, Ian Rennie, and artist-turned-cidermaker, Peter Stuart, in 2008, Thistly Cross has gained a reputation for making ciders that people rave about.

Bottle, smallish bubbly head, clear deep yellow color, aroma of candy, honey and wax with light apple notes, flavor of honey and very ripe apples, very sweet but not cloying. Could use some sourness to counterbalance the sweetness but still quite delicious.

Draft at Uiltje. Pours clear dark golden with a small off white head. Aroma of sweet red apples, apple rind, light wood and a little tart green apple. Flavour is above light sweet and light moderate sour, tart apple aspects coming out far more in the palate. Light medium bodied with above light carbonation.

Bottle split on the return from Cotteridge convention, 24/01/15. (Drunken rate) Many thanks to Lorna. Aroma is sweet apple, plastic, tart apple. Very clear golden coloured pour with a light white head. Palate is semi-sweet. Flavour is composed of honey, sweet fruit, apple, light tart.

Box @ Percy Shaw, Halifax. The barrel aged influence is certainly evident in its aroma and is very pleasant. It’s less evident in its taste, but here there’s a very good, and very crisp apple to be found. Very pale gold coloured.

BIAB at the AG Bell. Pours berry pale yellow with a thin bubbly head. First cider today to have a head! Aromas of vanilla, cooked apples. Taste is boozy, light sweet, boozy finish.

Keg @ Holly Bush Inn, Salt. Dishwater yellow with a carbonation. The ginger is dominant, certainly in its taste, but not overbearing. Its nose is lighter and like a fizzy pop drink. Its texture is akin to this also.

Cask at the standing order. Pours clear golden, nose is spiced rum, vanilla, apple, toffee, taste is similar, massive bourbon, boozy.

Bottle shared at a tasting at Ariel’s place. Clear pinkish orange. Aroma of toffee, apples, candy, and lots of strawberries. Sweet flavor, sugary, with apples, strawberry, and a faint tart hint. A bit sticky.
