Op 1 februari 2007 openden Bart Devillé en Ann Heremans café ‘Den Herberg’. Aanvankelijk was het echter niet de bedoeling een café uit te baten. Dit idee is langzaamaan ontstaan. We kochten het gebouw in 2000 aan om er een brouwerij in op te starten. Stilaan groeide het idee om er onze ambachtelijk gebrouwen bieren ook zelf te verkopen. Ruimte was er voldoende en mits enige grondige aanpassingswerken was het café nog voor de brouwerij af. Één jaar na de opening van het café was ook de brouwerij klaar voor productie.

On tap at DHVL. Pours clear gold with a white head. Belgian yeast on the nose. Flavour has a very nice floral yeast character, some white pepper, dry yeast. Very drinkable; nice.

Cerveza ámbar de respecto turbio, corona de espuma blanca, esponjosa y duradera. Su aroma ,suave pero agradable, emana notas de cereal, levadura, pan, especias, fruta de hueso y cierto toque cítrico. En boca mantiene la suavidad, cuerpo medio, carbonatacion media dulzor moderado y final amargo, notas de cereal, especias, cierto toque herbal y cítrico. Cerveza bastante agradable, leí en algún sitio que hay quien la considera un clon de la Orval... En mi opinión esto es exagerar demasiado, porque está cerveza aún no estando mal no llega al nivel de la Orval ni de puta coña.

Cloudy yellow to orange with a moderate off-white head. Barnyard, funk, lemon, autumn leaves, leather, lactic hints, wood, spicy hop. Pretty dry, pretty sour. Good.

Pours an unclear warm blonde to amber, loads of sediment. Medium white head fades very fast. Scent is more acetic than other Herberg geuze's. Old oak. Taste is full, intense funk, acetic (but not over the top at all) . tad 'rubbery'. It's got some aspects of their Geus Genereus, but feels less aged (and I can only assume it is!) . Oaky. Very high carbonation. Actually a very nice blend, i expected less after the aroma. Fairly fullbodied.
