Description
A staple of the downtown community, Springfield Brewing Company has been in the business of brewing one of a kind, supremely drinkable beers since 1997. Our story really started when the Paul Mueller Company purchased the building, creating a beautiful showcase for their one of a kind stainless steel brewery tanks and changing the landscape of downtown. Their goal was to provide our community with a one of a kind brewpub experience combining local craft beer with great food.

A group of close friends and beer lovers got together and purchased the Brew Co. in 2011 it was their mission to continue creating award winning craft brews and working to perfect the menu. Our restaurant takes pride in operating as a scratch kitchen, bringing together fresh and often locally sourced ingredients to create one of a kind dishes.

Our brewery focuses on creative and tradition English, German and American style ales and lagers. Over the years we’ve been the proud recipients of Great American Beer Festival awards for many of our beers. Our aim is to continue working toward a harmonious balance between food and beer and we think we’re doing a darn good job! So stop in, grab something to eat and try one of our beers fresh on tap!

Bottle from sethdude, thank you man, Tom Waits rocks. Pours with a medium head and a dark ruby red, with no clarity into it. The head turns into thick cm large halo lacing. Aroma is very buttery oak, lightly leafy, lightly spoiled fruits with light earthy sourness. Taste sweet oak with light spoiled and sweet berries, barely sour flavor. Kind of not sour, sour but not too much. Lots of spiciness all around. Too much butter that is slightly offset by the light sourness. Hey its a sour, but not to special.

Murky amber. Blueberry, woody, appley aroma. Light fruitiness (berry, pear) and some vague chocolate. Decent, if a little bit rough and oily.

Bottle courtesy of hopscotch. Pours cloudy dark amber with off white head. Sour aroma with some oak. Flavor is brett tarrtness with vanilla, oak and caramel. Medium body with lively carbonation and a creamy mouthfeel. A really nice brew.

Bottle at the Laid Back Brussels Tasting (Feb 9, 2008)
Clear, amber body with an off-white head. Nice lace. Aroma of hops, malts (caramel), mint ... great aroma! Heavily bitter, lightly sweet flaovur. Well balanced, smooth flavour. Ok complexity. Not too hoppy, but nice balance (in the same way as De Ranke Père Noël combines caramel and hops).

12 oz. bottle from a friend of tjthresh. Pour is clear golden yellow with tons of carbonation bubbles clinging to the glass and a one inch white head that falls fast. Aroma of some grainy sweetness. Taste is a sharp sweetness initially, settling into a card-board grainy body. I have certainly had far worse pale lagers in my day, and for what it is, its OK.

12 oz. bottle, courtesy of a friend of tjthresh’s. Pour is orange-gold, clear, visibile carbonation bubbles and a one inch off white head. Aroma of biscuit malt and some spicy hops. Taste is straight forward pale ale, nice balance between malt and grainy hops. This had more of a British feel to it, but it was well made and enjoyable.

Bottle, thanks to beerhandy - dark amber body with foamy/soapy lace - sweet caramel nose, with a bit of balancing tartness - caramel, nuts and light fruity esters - a bit of peppery spiciness leading to a somewhat bitter finish that keeps the sweetness from overstaying its welcome - pretty darn good.

Light amber with a light white head. Slightly hoppy, fennely aroma with a malt balance. Medium-bodied; Hoppy initial taste with some inherent sweetness. Overall, a decent APA, definately worth trying! I had this bottle at the Winter Party at Oakes' place in Toronto, Canada on 05-December-2003. I owe a large thanks to Sarah and Jeremy (Jercraigs) for letting me try this beer :-)
