Description
Gregory Hall founded Virtue Cider in 2011. He is known for his 20-year tenure as brewmaster at the Goose Island Beer Company, having won 14 consecutive Great American Beer Festival medals and pioneered bourbon barrel-aged beer with Bourbon County Stout. In the spring of 2011, Hall left Goose Island and embarked on a two-month pilgrimage to study the craft of cider, touring and tasting at top cidermakers in England and France. He brought his extensive experience and innovative style to launch Virtue Cider. In 2013, Hall brought the cidermaking venture as close as possible to one of the United States' best apple-growing states of Michigan and launched Virtue Cider in Fennville, Michigan.

From 2015 to 2023 Virtue was owned by ABInBev. Greg Hall bought the Cidery back in 2023.

750ml bottle from Imbibe Wine. Nose is tart green apples with minor bits of vanilla and bourbon. Lightly hazy pale yellow with a big white head. Flavor is lightly sweet, lightly tart, and some tiny hints of bourbon.

Draft pour. Fresh cut apple aroma. Incredible cider with a very clean, refreshing, apple flavor. I could drink this all day. Very well done.

tap at JK O’Donnell’s - This cider has a ripe apple aroma and tastes tart, lightly sweet, and finishes on the dry side. It’s light bodied with light carbonation. Very good cider. The sugars are at a very nice level, lending some sweetness but not too much. I couldn’t tell it was bourbon barrel aged. Seeing that here on the site was the first I knew, so don’t expect a lot of bourbon taste.

Cloudy light apple juice colour. Appley, skins, maybe a bit of wood? Assertive tartness, with lively acidity late - it’s almost acetic, which is a bit problematic but on the other hand is unique. The way to cut the acetic off the palate is to have a little lacto before. This works, trust me.

Bottle. Pale and clear straw hued body with a white head that fizzes away quickly. No legs. Aromas are of floral notes, milder light colored molasses, oak, juicy apples, isoamyl acetate, vanillin, caramelized fruits, medium apple. Flavors are medium acidic, low tannic, some isoamyl acetate, oak, bourbon vanillin. Everything leads to a slightly appley (over ripe) bananas foster type flavor. Finishes dry with a light sulfury apple, perceived richness mid palate. Tasty. Lively carbonation, medium low body, good acidity balance.

On tap at One-Eyed Betty’s in Ferndale. Pours an almost clear straw. Sour white grape aroma, with even a hint of ketchup. Flavor is also sour white grape, sugary but dry, maybe some tart apple. I just love this.

Sample at Hopleaf. Pours a clear yellow-gold color with a thin fizzy white head that burns away quickly to an outer ring. Short strings of lacing on the glass. Fruit, spices and vanilla in the nose. Medium-bodied with flavors of tart spiced apples, vanilla and oak. The finish is mildly sour apples with an oaky vanilla aftertaste. Pretty good overall.

Bottle (2012). Pours with a clear pale hued body with a white head that fizzes away. Aromas are of oak, funk, diaper, medium-low sulfur, tannins, strong oak lactones and light fruit. Vanillin. Flavors are medium dry with moderate acidity and fruit tannin, but a pretty strong oak contribution that works well with a mild and rustic brett character. Lightly vinous, with moderate carbonation (could be higher). Not bad.
