En fût au Winter Warmer 4. Couleur noire opaque, mousse lait au chocolat. Arôme d’espresso, malt torréfié, grains de café. Goût de café noir, malt torréfié. Carbonatation moyenne, corps moyen-dense.

Olfactif: Forts arômes de vin au premier nez. Viennent ensuite les cerises et les fruits des champs sur une base de levure sauvage. Arômes très complexes et à développement progressif: au début le vin, puis, les cerises, les framboises et les poires avec en finale les esters de levure. Visuel: Ambrée / rouge, légèrement floue. Mousse petite à moyenne épaisseur, de type rocailleuse et à persistance moyenne. La mousse colle bien et la dentelle y laisse une trace. Gustatif: L’attaque se veut surette et acide à coup sur. L’action des levures sauvages est très forte mais néanmoins accompagnée de belle notes de fruits. Les cerises, les pommes y sont présentes avec également de toutes petites notes de boisé ainsi qu’une légère présence de caramel. A plus haute température, les sucres y prennent plus d’effet; le sucre candi s’y montre le bout du nez. En bouche, elle présente une texture mi-aqueuse, mi-huileuse, un corps moyen et un équilibre axé sur les levures et le malt. À boire un peu plus chaude que fraiche pour en apprécier ses saveurs.

A clear copper amber ale with floaties, and a thick frothy dirty mocha head. In aroma, sweet caramel malt with fruity notes, vinous character, floral and piney hops, dark fruits, alcohol warmth. In mouth, a nice caramel malt with loads of fruity esters, licorice, bitter herbs, floral hops, alcohol warmth. Bottle is about a year old.

Bottle from Tom10101. Aroma was initially malty with a noticeable pilsner character but that quickly went away. Nice floral aroma with some secondary fruit esters of pear, citrus and fresh strawberries (surprising). A hint of Brett but rather subdued. Pours a cloudy pale yellow gold with a big, pillowy white head that has fairly good retention and nice lacing. Flavor is similar to aroma with a bit of graininess upfront followed by a moderately strong floral note. Moderate, clean crisp bitterness washes away the floral note bringing it hints of pear and citrus. Rather dry finish. Just a hint of cherry pie and barnyard mustiness in the finish. Slight lingering graininess and bitterness with a touch of pear and red cider. Mouthfeel is medium bodied with medium high, silky carbonation. Low astringency and low alcohol warmth. Overall a fairly nice beer and a rather complex Saison, but not quite on point for what I look for in saisons. I prefer a more citrusy saison with a bit more acidity to it. I would also prefer a slightly different Brett character. Nice, but not my favorite; has the potential to be other’s favorite though depending on what you want in a saison.

A dark brown stout with no head, viscous. In aroma, sweet grassy chocolate with light off veggie notes. In mouth, a bitter chocolate with light metallic notes, ok.

A dark brown ipa with a thin mocha brown head. In aroma, pleasant biscuit malt with loads of floral hops, resinous and smooth. In mouth, smooth coffee grinds with nice resinous floral hops, bitter chocolate , nice.

A hazed golden ale with a thin white head. In aroma, smooth biscuit malt with faint grassy hops. In mouth, a grassy biscuit malt with roasted notes, grassy metal hops,OK.
