Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Sample at the RB CBJ Bottleshare 27/11/2024 Tart and sweet apple fruity, getting some real almost cheese twang which is pretty amazing, medium body and acidity, could imagine this pairs with cheese well, great stuff.

Bottle. Fine Cider Company online shop. Soft haze on a rusty yellow gold. Short lived white foam. Nose has Pedro Ximenez sherry. Well stewed orchard fruit. Lightly vegetal oxidation. Taste is semi sweet with some fruity funky yeasty character. Drinks preposterously easy for 11% feeling spritzy and clean. More of the sherry notes to finish while it stays fruity and drinkable like a perry should be. An absolute treat.

Bottle from the interweb (Raynville or HoTM). It pours clear oily golden - amber with a bubbly white head. The aroma is bright, juicy, crunchy, ripe apple, apple skin, apple crumble, vanilla custard, festive spice, leather, super funky, barnyard and byre muck. The taste is crispy, drying, snappy, crunchy apple, tangy, tannin, leather, tart edge, lemon sherbet, fizzy candy, touch of alcohol, dry oak, funky, barnyard and a some sweet manure with a drying finish. Average body and fizzy, effervescent carbonation. Fun stuff. Bright, crunchy and funky.
