Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Cask at the Cock Tavern - Hackney. Pours mostly clear light gold with little to no head. Sweet semi-ripe apple, mellow funk, light acidity, a little salty. Good depth. Medium bodied with very fine carbonation. Balanced finish, light salinity, decent sweet apple notes. Sound.

750ml wired cork bottle from Gloucester Services Farm Shop. Opened with a pop. Sparkling, orangey golden colour, short-lived big foamy head and aroma of fruity apple, orchardy, with leathery funk. Taste is sweet, juicy, apple, orchard floor, leather, meaty, funk, woody, oaky, some tartness and bittersweet tannin. Medium bodied, spritzy carbonation, dry funky tart & tannic finish. Very drinkable.

750mL bottle, pours a clear pale blonde with a little tiny white head. Aroma is wonderfully funky, with lots of barnyard notes, musty pears, and champagne-like effervescence. Flavour is moderately funky, with a nice pear skin character, moderate barnyard character, and light residual sweetness. Complex and funky, with fairly low carb for the style. Very good.

750ml bottle with hand written label from Tom Oliver. Drunk along with some cheddar wrapped in Herefordshire hops. Hazy orange gold colour, white foam rim and aroma of apple, fruit, funk. Taste is sweetish, tangy, apple, fruity, orchardy, leather, funky, with bittersweet tannins. Medium bodied, light carbonation, dry fruity tannic finish. Very drinkable, the cheddar brings out the fruity notes.

750 ml bottle bought at Gloucester Services Farmshop. Pours clear orange gold with a fast dissipating opaque bubbles. Aroma: bittersweet apple, straw, hints of blossom & honey, mild funk. Taste: Towards moderate sweet, apple skins, oak, some tannins. Medium body with spritzy carbonation. Lovely

Cask at Small Bar, Bristol. Sampled July 2017. Pours clear dark gold with no head. Aroma: mild smoked apple, green apple, funk, grass. Taste: light to moderate sweet, tangy, pithy, mild tannins. Medium body with no carbonation.
