Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Panda thanks to Danlo: Poured a golden with a white fast dissipating bubbles. Aroma is woodsy, spice, apples, tannins. Taste is tart green apples, tangy is spot on as intended, tannins.

750ml bottle from Cat in the Glass. Golden colour, white foam head that dissipates to a thin rim and aroma of rich apple, caramel, toffee apple. Taste is sweet, juicy apple, fleshy, fruity, tangy, leathery funk, with caramel, toffee, and bright drying tannins. Medium bodied, light carbonation, medium sweet funky tannic finish. Very drinkable.

750ml wired cork bottle from RAD beer. Cork self ejected with a very loud pop. Slightly hazed orangey gold colour, large foamy head that quickly dissipates away and aroma of leathery funk, apple, fruity. Taste is sweet, tangy, fruity apple, juicy, and horseblanket, funky, leather, orchard floor, with bittersweet drying tannins. Medium bodied, spritzy carbonation, dry tannic finish. Very drinkable.

75cl bottle from Appellation Wines. Appearance - golden and clear with steady carbonation and an initial head that quickly disappears. Nose - wood and apples, apple skin. Taste - fresh and baked apple, some hay and wood lurking. Palate - medium bodied, tangy and bittersweet middle and finish. Overall - good gear!

500mL bottle, pours a clear amber with a tiny white head. Aroma is lightly funky, with toffee, red apple skins, and a touch of brown sugar. Flavour is modestly funky, with toffee apple, caramel, and red apple skins. Minimal residual sweetness but enough to ward off that bone dry residual character. Decent funk to it. Nothing amazing but this is well-done as usual for Oliver's.

75cl bottle from Appellation Wines. Appearance - golden and fairly clear with frantic carbonation. Nose - baked apple but sharp apples. Some hay. Taste - more baked apple, but still with a bit of fresh fruit acid. Palate - medium bodied, tangy bittersweet middle and finish. Overall - good.
