Description
We want to make wine for Nordic cuisine.
Fruit wine - well worth noting!
Although we can grow Rondo, Solaris and other grapes in Denmark, it will be difficult for us to compete with Germany and France when the quality and economy must match.
This is not the case with fruit wine.
Because we grow some of the world's best fruit in Denmark. The fluctuating temperatures during the growing season and not least between day and night, because the fruit gives a high acid content.
And the acid is just the most interesting thing with a winemaker's glasses.
These are fruity wines with lots of acid and fine fruit in the nose and taste.
Ideal companions for Nordic cuisine.

Can @Last Højbjerg Tasting in Højbjerg. 2017 version, 10.5%. clear golden, small white head. Apple and concentrated apple aroma. Very high carb. Sourish, sweetish apple flavour. The quite high carb is a little disturbing.

Bottle @ Saxo tasting. 2017 vintage. 10.5 % ABV. Clear golden without head. Aroma is sweet, apples and fruity. Flavor is quite sweet and light acidic. Dry and light acidic finish. Carbonation is too high. 050621

Dark yellow colour. Powerful apple aroma. Moderrate apple flavor. Average moderate finish. Oily palate. nice.

Solsletta 311220 as Malus Danica 2016 9,5 %. Golden color wth no head. Apple, alcohol. Flavor is apple, alcohol, sugar.Very nice one.

[ As Cold Hand Winery Cold Hand Malus Danica - 2015 ].
ABV: 8.0%. Clear medium orange colour with virtually no head. Aroma is moderate apple, rich apple, wood, warm, apple peel, sweet apple, rich intense apple. Flavor is moderate to heavy sweet with a long duration, apple, wood, dry, rich intense apple, concentrat apple, lovely. Body is medium to full, texture is oily - syrupy, carbonation is flat, finish feel is warming. [20201120]

9/5/2020. Sample courtesy of danlo, cheers Ed! Pours clear dark amber with minimal head. Aroma of sweet toffee apple, pastry and light wood. Medium sweetness and moderate tartness. Sticky texture, low carbonation. Lovely tart finish. Extremely drinkable.

[ As Cold Hand Pyrus Danica 2016 ].
ABV: 12.%. Clear medium yellow colour with virtually no head. Aroma is moderate to light heavy pear, rcih pear, concentrated pear, pear juice. Flavor is moderate to light heavy sweet with a long duration, pear, sugary, oak, alcohol, vanilla, rich, pear juice. Body is medium, texture is watery - syrupy, carbonation is flat, finish feel is warming and light alcoholic. [20190926]

375ml bottle Vintage 2016 (12%) courtesy of Saxo and Rasmus via Grumbo, cheers guys! Amber gold colour, no head and aroma of concentrated apple, apple pie, pastry. Taste is sweet, fruity apple, tangy & tart, apple pie, apple syrup, with woody, apple core and tannin hints. OIly mouthfeel, medium bodied, low carbonation, sweet & drying finish. Very sippable.
