The microbrewery is founded by Achilles Van de Moer on the passion for special beers. After 7 years of trials with different beers, the decision to start a microbrewery in Itegem was made in 1999. The brand name of beers is “Serafijn”. All beers are high fermentation brews, with second fermentation in the bottle. Most of the beers are contract brewed, but some of them are also brewed at their own location.

In 2015 Achilles became part of Caupona bvba (of the Prik & Tik stores in Heist-op-den-Berg and Herselt). The brewery is now called ''Brouwerij Serafijn.'' That is the new company in Heist that houses the Serafijn beers. The former microbrewery in Itegem has been dismantled.

The beer is now brewed at the Pirlot brewery in Zandhoven.

Huge, fine-yellowish head over deep orange beer, hazy. Dry, spicy, white candi sugar. Bit flowery, and alcohol lurking. Very dry, spicy taste, bit of liquorice. Vague celeri, or other vegetable - even cilandro. Again, suspicion of white candi sugar. Warming up, almonds, and, strangely enough, some hops coming up. Alcoholwarming, meidum bodied, slick, quite carbonated. Good beer, but nothing original to it.

33cl bottle. pours cloudy brown, large but not smooth offwhite head, that shrinks fast. aroma is sweet caramel syrup, sawdusty hops. malt. nice sweet aroma flavor is roasted grains, malts, caramel, bitterness probably from hops and alc. a good strong sweet malty beer.

Bottle. Frothy off-white good mostly lasting head. Amber colour. Moderate malty and hoppy aroma. Light bitter flavor. Moderate bitter average finish. Not much fruit. Oily palate. Boring beer.

Sampled at Zythos 2009. Copper colour, thin beige head. I have a slightly toffee toasted beer in front of me, bit watery and no real flavour.

Brown bottle, 33 cl, via Importations Privées Bièropholie, savoured on March 18 2009; eye: polished copper, clear, good effervescence, voluminous white head that turns into a thick sheet, good lacing; nose: yeast, bread, malt, alcohol, pepper, residual sugar, slight basement, fruity; mouth: yeast, malt, alcohol, alcohol warmth, light residual sugar, fruity, finale in caramel malt with a good presence of pleasant alcohol, lightly sweet, rather carbonated, medium-full body, creamy texture; overall: quite likable FRANÇAIS Bouteille brune, 33 cl, via Importations Privées Bièropholie, savourée le 18 mars 2009; œil : cuivre poli, claire, bonne effervescence, mousse blanche abondante qui tombe et se transforme en une épaisse couverture, bonne dentelle; nez : levure, pain, malt, alcool, poivre, sucre résiduel, très léger cave, fruitée; bouche : levure, malt, alcool, chaleur d’alcool, léger sucre résiduel, fruitée, finale en malt caramel avec une bonne présence d’alcool agréable, légèrement sucrée, plutôt carbonatée, corps moyen-corsé, texture crémeuse; en résumé : bien aimé

(Bottle at One Pint Pub Belgian weeks ’09 -- shared with Sinensis, thanks!) Golden and hazy. Small white head. Sweetness, caramell and sulphur in aroma. Medium bodied and dryish palate with medium carbonation. Sulphur, frutiness, sweetness, malts and some citricness in taste. Shot sweet and bitter aftertaste.

Draugth Muddy orange/blond body. Off-white, creamy head. Excellent lace. Nose of caramel, flowers, honey, hints of hops, ... Moderately bitter, lightly sweet flavour of orange peels, yeast, ... Dry finish (bit astringent). Strong mouthfeel. Ok complexity.

Bottle thanks to bu11zeye. Pours with a foamy white head over a hazy golden body. Aroma of bread, alcohol, pear and light spice. Taste is buttery, fruity and a bit dry and spice. Slightly bitter. Light bubbles and a watery mouthfeel. Par for the course.

Bottle thanks to bu11zeye. Pours with a huge, foamy off-white head with good retention. Hazy orange body. Good lace. Aroma of bread, pear, caramel, cinnamon and sort of a koji like sake presence to the yeast. Taste is wet hay, bread, pear, rotting, caramel and grain. Sparse but lively carbonation. Dry mouthfeel.

(33cl bottle) Hazy, amber to brown colour with a medium-sized, slightly off-white foamy head. Sweet and toasted malty aroma with caramel, coriander, nutmeg and a slightly vinous fruity touch of figs. Sweet flavour, quite slim bodied mouthfeel with a lively carbonation. Toast-malty taste with notes of caramel and a moderate fruity touch; sweet and slightly bitter toasty and restrained fruity finish with light spicy notes (08.II.09).
