Description
The founder of the brewery was a doctor in medicine, Louis Nevejan.

We have recently found papers in the archives stating that the first building dates from 1835 AD. Once it was both a brewery and distillery. The founder died in 1882 and the brewery was sold to Alouis Costenoble. The family brewed for three generations until 1980 when the brewery stopped.

Beer brands included COQ PILS OUD BRUIN & COSMOS. In Esen there were six breweries (all small and part-time) and two distilleries. The actual brewer is doing historical research on West-Flanders breweries since 1900 AD, and has got the 'GOLDEN HAMMER' Trophy, a two yearly award for historic research on breweries. This was attributed by vzw 't Hamerken in Bruges on March 27, 2000 AD

Muddy brown/orange colour. Nice head. Yeast and citrus aroma. Fruity citrus (oranges) flavour with notes of toffe and caramel; complex. Peppery finish.

Opaque dark brown colour. Lasting light brown head. The aroma is sweet - plummy and fruitcakey with roasty, nutty notes. Rather fizzy, and this distracts the palate from what appears to be good flavour underneath. What I can taste is rich black malt flavour, with hints of roast, toast and hop. There is a lingering roasty bitterness, but this too bows down before Emperor CO2. Sweet flavours, terribly body due to overcarbonation.

Bottled (BB 02/2005)
Hazy yellow with good creamy off-white head. Aroma is typical DDB-nose: banana, apricot, yeast, hints of alcohol and spices. Very soft malt character, alcohol kicks quite well but mouthfeel is extremely pleasant, yeast rounds the corners. When beer warms up, woody notes appear. Long hoppy and alcoholic aftertaste with spices and tar behind them. Open fire, winter outside, glass of this ... excellent.

Hazy golden colour. Huge, thick head. Yeasty citrus aroma. Fairly light bodies. Somewhat fruity with a intense, long resiny, piney bitterness.

I couldn’t come up with a better nightcap than this beer! Provided by JCW, shared with Brodie and BelgianGirl. Slightly hazy orange-red body, medium/thick light cream head. Sweet brown sugar aroma with caramel, oak, and alcohol. Very sweet body (much like the regular Stille Nacht in that regard), with plenty of caramel and residual sugars playing off a variety of sweet fruits, including plum, figs, a touch of cherry, pear, apple, and persistent vinous white grapes. The alcohol provided a touch of heat, but this component was cut by the sweet sugary malts. Everything I expected and more. This beer cements De Dolle as my favorite Belgian brewer. Incredible.

Provided by JCW and shared with Brodie and BelgianGirl. Cloudy orange-red body, big creamy overflowing head. Enticing, complex aroma with cherries, caramel, apple, a touch of cinnamon, and white grapes in addition to earthy hops notes. A bit sour. The flavor was no less complex than the aroma, with white grape, raspberry vinaigrette and toast mingling with sour musty earth and other assorted sweet rotting fruits. Bready. Immensely complex and satisfying with just the right amount of sourness and earth to balance the fruits and breads. I never thought I’d see this one.

Hazy amber color. Porto like, a bit woody, raisins... (aroma and flavors). Excellent!

Bottled (BB 05/2005)
Hazy golden color, huge white head, lace. Strong nose: yeast, leather, peach and paperbag. Full-bodied, warming, alcohol kicks in the middle. Lemon hoppy flavor with licorice in the edges. Carbonated mouthfeel and typical DDB character in this. Another masterpiece from DDB.

Bottled
Opaque black, huge brown head. Aroma has black coffee, roasted malts and cardboard. Medium-bodied (hides 9 % extrelemely well). Dry, chocolaty with lots of roast.Overhelming complex flavors. Long roasted, slightly alcoholic aftertaste. This is like Guinness on drugs or Westy12 mixed with stout. Another masterpiece from DDB.

Hazy orange, small white head. Fruity (mango and lemon) and spicey aroma. Spicey flavor with fruits: pear, grapefruit and added sugar. Finishing with hops and spices. Sweetness in the aftertaste. I dig this brewery!
