Description
Eind jaren 80 zijn we thuis, in de Potterstraat te Sint-Pauwels, begonnen met bier te brouwen. Deze bieren werden met minstens eveneveel passie gedegusteerd als gebrouwen. Stap voor stap en met veel passie en kennis ontwikkelden we de volgende jaren onze recepten die uitmonden in onze vlaggeschepen Sinpalsken Blond en Donker. Sinds 1996 zijn deze commercieel beschikbaar. Onze passie en kennis zijn alleen maar gegroeid doorheen de jaren. We zijn dan ook trotse brouwers !!

Doorheen de jaren ontwikkelden we ook ons concept van bier op maat. Meer informatie kan je vinden op deze website.

Onze kernwaarden zijn : Passie, Kennis, duurzaamheid, lokale verankering en sociale verbinding.

Passie en kennis : we zijn al meer dan 30 jaar actief in het brouwersvak !

Duurzaamheid : We zijn er van overtuigd dat we spaarzaam moeten omgaan met onze planeet, daarom gebruiken we lokale grondstoffen en al onze verpakkingen zijn retourverpakkingen.

Lokale verankering : Alhoewel ons bier overval wordt gedronken, hebben we onze sterkste verankering in het ruime waasland. Ons bier is hier heel vaak te krijgen in de meeste drankencentrales.

Sociale verbinding : Bier drinken is een sociaal gegeven, we vinden het belangrijk, Familie De Cock, is altijd al gekend als sociaal betrokken en geengageerd. Dit willen we ook uitdragen door onze bieren samen met anderen te degusteren willen we de sociale verbinding versterken.

Bottle. Clear medium yellow orange color with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is light to moderate malty, toasted, moderate yeasty, light toffee. Flavor is moderate to heavy sweet and light moderate bitter (burnt caramel) with a average duration. Body is medium, texture is oily, carbonation is soft. (190308)

Bottle: Poured a blonde with hazy jello with a cream white head. The aroma was fruit and hops. The taste was floral and metallic hops. Very nice blonde beer.

Bottled. Golden colour, with slight haze, big creamy white head. Aroma is really strawberry, slight yeast, some fruits and slight caramelly notes. flavour is very much the same along with slight sugarynotes. Once it warms up some slight soapyness in finish.

33cl bottle from Noel Cuvelier. Cloudy orange gold with thick lasting beige head. Slightly woody belgian yeast aroma. Some tangerine. Bit full in mouth due to the alcohol. Again, it’s a very competent Belgian strong blond. Nothing special but very drinkable and rather nice. Some wheaty malt in the mouth

33cl bottle from Noel Cuveliers, Abele. Browny/russet colour with thick lasting beige head. Some yeast, some dry malt. Some dark fruits. Juicy dark fruits in mouth. A more than usual fruity dunkel. Some vanilla. Slightly different to normal dark belgian beers. Finish has a good fruity tartness and touch of peppery hop. Sharp dark fruit juice is very good.

Bottle: Poured a dark brown with white head. Very vinigery aroma pungent to the nose. Taste was bitter at first but left to finish a sweet malt.

Bottle @ Kerstbierfestival 2006 in Essen, BE. Brown color with a small white head. Aroma is harsh malty, caramel, fruit, stabel. Flavor is sweet and very acidic, with a long duration. Not a beer for me. (det er en ommer !)

Bottled. Dark hazy brown colour, mediumsized beige head, which lasts for quite long. Aroma is a bit barnyardish, but mainly malty (sweet malts). Flavour is barnyardish and hoppy with some sweet wineish fruity hints. Some spices also in the aftertaste.

Bottled [BB 07/2007]. Dark nut/ruby red-brown, good tan head. Lemony fruity aroma, not very strong. Fruity, prunes, dried fruits, not very full-bodied. Alcohol gives a bitter, lemony tickle. Could be more complex.

Pours an orange colour with a big off-white head. Sweet malty aroma with some hints of alcohol. Sweet malty flavor with hints of caramel and alcohol. Dry finish with some bitterness.
