SHIRE Brewing è un progetto che prende vita nel corso di una lunga storia che si cela dietro i pentoloni casalinghi. Dal 2017 cinque ragazzi, che ben presto diventano due, Mirko e Gianluigi, nel piccolo paesino di montagna di 200 anime Porciano (The Shire) sognano e sperimentano qualunque tipo di idea su un piccolo impianto homebrewing da 50lt a nome "Castrum Porciani Brewing". Nel corso degli anni, le esperienze divengono numerose, Mirko partecipa ad un corso intensivo di KPU Brewing and Brewery Operations a Vancouver ed un paio di esperienze in birrifici laziali (tra cui il romano Rebel's). Nel 2020 si intensificano le sperimentazioni casalinghe no-stop, incentrate su un' idea di produzione studiata al dettaglio. Nel 2021, i due ragazzi ricevono un'importante convocazione a partecipare alla creazione di un progetto all'interno di Birrificio Oxiana. Prende vita SHIRE Brewing, un percorso birrario che incentra la sua filosofia in produzioni old school anglosassoni e germaniche, che non si farà mancare l'uso di nuove tecniche di luppolatura.

Handpump at Ma Che Siete Venuti a Fa. Pale golden, light haze, white head. Grainy nose, herbal hops, minerals, dry soft chewy body, light perfumed finish. Quite crushable.

Tap. Unclear golden color, quite bright and with a frothy white foamy head. Nose:sweet malty and hay aroma. Mouthfeel is malty, a bit honey, medium dry and decently bitter.

Pours black. A couple of fingers of yellowish/brownish large meshed head. Recedes quite quickly, still leaving a layer and a bit of lacing. Average intensity in the aroma: mainly roasted malts with notes of coffee and dark bread, a bit of soft fruitiness (red fruits/fruit cake), a hint of salty/mineral. Simple but well defined, slightly soft. Taste shows a more nitid oyster contribution: roasted malts now less prominent, still taking the main stage but feeling quite delicate, a touch of fruitiness as per aroma, a very nice, well integrated, seaweed-like feel (a touch of green/balsamic, mineral and salty hints). Again, relatively simple, but very well defined and superbly balanced. Sweetness and bitterness are both quite low and none stands out in either taste or aftertaste. A clean, refreshing, slightly green finish/aftertaste. Light bodied, pretty low carbonation brings just the slightest sparkly hint; the beer feels smooth and nicely silky. Super nice.

Cask at Ma Che, 5/13/24. Clear mahogany. Large, creamy, beige head, well-retained. Toasted nose balanced with brown sugar and honey-like malt. Moderate fruitiness and very clean with low hopping. Clean, malty, very flavorful for its size with good attenuation and a more rounded toastiness. No tannin from the specialty malt whatsoever. Lingering toffee and molasses notes.

8-4-6-3-13 On tap @ Open Baladin, Roma. Pours yellow, with a big creamy head. Aroma is zesty herbal hops with floral notes and grass, as well as malts with hay and cereals. Medium to full body, with soft carbonation. Flavour is sweet herbal hops with floral notes, as well as malts with cereals and honey.

Golden semi-clear a bit pale, frothy irregular off-white cap. Nose is grassy, mild floral, malty. Mouthfeel is softly malty, a bit thin, easy, medium bitterness.

On tap @Luppolo Station (Rome). Dorata viva, brillante, limpida, schiuma bianca media, discretamente persistente. Al naso note erbacee e di malto. In bocca è piuttosto amara ma comunque ben bilanciata dalla parte maltata, fresca, pulita, secca. Corpo leggero, carbonazione media. Pils ceca con alcune licenze, ineccepibile bene fattura.

On tap @Luppolo Station (Rome). Bruna, mediamente torbida, schiuma ecrù media. Al naso tanto luppolo, note tostate, di pane abbrustolito. In bocca ha note tostate e un amaro bello presente, lungo, caratterizzante. Corpo medio-leggero, carbonazione media. Un po' fuori stile e caricata sull'amaro.
