Description
Bellwoods Brewery began as a small brewpub in the west end of Toronto in 2012, and underwent a couple modest growth spurts over the years to encompass two retail shops (selling fresh cans and bottles), and a production brewery in North York (mostly to house The Foeder Pyramid). These days, we produce about 18,000hL a year, which is a mere blip in the grand scheme of Ontario beer, but keeps us pretty busy. The styles we’re interested in brewing range greatly, and we always remain open to new ways of making beer. For the most part, our current efforts are devoted to aromatic hoppy stuff, crisp lagers, barrel aged wild blends, fruit-forward zingers, and the occasional barrel aged stout. There’s always a new, creative project waiting in the wings. We’re still a relatively small, collaborative team, forever dedicated to the pursuit of perfect beer–thanks so much for partaking in the fruits of our labour.

500ml bottle fresh from the brewery. Pours a slightly hazy orange with a generous off white head that settles quickly but leaves some lace. Nose is lots of pine and citrus and earth. Starts sweet malts and honey but quickly picks up bitter lemon and grapefruit to produce a nice dry finish. Very fresh and earthy. Medium slick mouth with soft carbonation. Thoroughly enjoyable.

Light brown, fruity, hoppy aroma. Sweet and spicy. Reminds me a bit of Maduro, with more limey hops.

500mL bottle, courtesy of wilco (thanks a lot, Mike), pours a hazy light golden with a medium white head. Aroma brings out lots of floral hops, zesty citrus notes, and biscuity malt. Flavour is very much the same, bringing out biting floral hops, some zesty grassy hops, and a dry crisp biscuity malt. Very crisp and dry, with amazing drinkability. Wonderful pale ale.

On tap at Bar Volo, pours a clear copper with a small white head. Aroma of citrus hops, dank earthy notes, and biscuity notes. Flavour is fairly bitter, with notes of pine, earthy notes, and biscuity malt. Pretty dank and earthy. Easy drinking, with a fairly astringent aftertaste. Good beer.

On tap at Bar Hop, pours a cloudy blonde with a small white head. Aroma of citrus hops, bone dry biscuity malts and some light tanginess. Flavour is similar, with dry citrus notes and biscuity notes. Very dry and well-balanced. Very thirst-quenching. Great one.

(500mL bottle from brewery) Pours a slightly hazy gold with a small bubbly white head, faded to a ring with no lace. Aroma definitely different, herbs (dill!), grassy, kind of like a woven fibre bag, slight bit of the coconut you can get with Sorachi and a definite sweet core of pale malt and slight fruit. Flavour has more grass, herbs, especially dill, a little bit of citrus fruit, some coconut, lightly sweet pale malt, fading into a drier, bitter finish with a sort of dried herb nature to it. Light to average body, average carb. What an odd hop. Even compared to other Sorachi beers I’ve had, it sticks out as being totally unique here. This is interesting, and it’s definitely not bad, but I can’t say I love it. I’d take another batch of the Mosaic any day!
