Description
The beer of Val Dieu is synonymous of quality and authenticity. It is the only Belgian abbey beer to be 100% brewed in a living abbey such as the famous Belgian Trappist beers. The monks of the Abbey of Val Dieu are the ones who are at the origin of the beers which are brewed today on the site. Historically, the Cistercian monks were famous for their qualities as brewers. The monks of Val Dieu are in line with this reputation.

Probably a 2003 or 2004 bottle at the Downtown Liquors Trippel tasting 3/24/05. Explosive uncorking with mountains of foamy white head and a dulled copper-gold body. Good head retention and plenty of lacing. Aroma has notes of lemon sugar cookies, not much funky yeast, honey, cookie dough and light perfume. Alcohol VERY well masked in both the aroma and flavor. Flavor is immediately malty sweet. Good mouthfeel, this stuff really wraps around the palate and has quite a substantial body to it. Light lemon zest notes, lots of pils and/or caravienne malt sweetness. I get no hops out of this, though many mention them. Yeast is very restrained in this one, which is my only complaint. This almost seems like an Americanized version. No musty, corky, dry yeastiness, or little of it, anyways. Perhaps it’s just the force of the malt. Regardless, this stuff has a wonderful body, mouthfeel and wonderfully extracted malts. A big surprise, as I’ve never heard any raves about this stuff. It’s strange, as usually I like very dry, overly yeasty, highly phenolic trippels, and this one is about as far from that as I’ve had.

Dense off-white head like whipped egg-white; opaque dark brown beer, with orangey shine. Earthy, leafy, mossy nose, but all very subdued. And dark malts, of course, bière Wallonne oblige Mix of cookies and spices, but in a clashing way, alas. I get continously conflicting flavours; generally (quite) sweet, spicey, bitterish, piney. Still, it’s OK, I suppose. Slick, nearly fatty, chewy; sweet aftertaste, liquorice-like. Reasonable winter ale. Not too spicey, just a tad too sweet. And (of course?), lacking character and balance.

Draught Amber with olive shine, seems to feature a very slight cold haze; very luxurious, dense yellowish head. Nose of "Belgian pickles", not too vinegary, however, milder. Grain & pale malts taking over, whiff of caramel. Caramel, dull sweet taste, adjunct-like. Bit of parsley and greenery. Ends a bit livelier. Slight burning sensation, palate starts empty, but fills in after given time to warm up. Probably served way too cold, but I’m rather afraid of what might be coming up with warming... underimpressed.

O.K. Vail-Dieu Winter, this is rating #10 for you, you’re out on your own now. The Tampa Trader, Matta sent this to me. Thanks Matt! Deep Deep Ruby brown color. Crystal clear and supporting an off-white creamy head that laces with the best of them. The aroma is malty, brown sugar and dried fruits with a vinous complexity. Thick and syrupy, smooth and coating. Sweetness that is strong, just shy of cloying, but tempered with some acidity and spice. Not the complexity and depth of the Trappists, but a good Belgian character to it just the same. A good winter sipper that warms things up nicely.

A hazy orange beer with a disappearing white head. The is weird with notes of alcohol and juniper berries. The flavor is sweet with primary notes of juniper berries. Not my cup of beer.

Best before Feb. 2005. Bought 1.5 yrs ago. Hazy golden ale with a thick white head. Aroma of rising bread and alcohol. Sharp alcoholic gin in mouth, with fresh finish. Some citrus notes. I remember this beer as being sweeter initially, now it is smoother.

Bottle Sparkling, amber body. Frothy-rocky, white head. Bad lace. Yeasts, alcohol and hints of hops in the aroma. Moderately bitter, light sweet initial flavour. Alcohol is present too. Bad choice.
