Description
Cellarmaker Brewing Company has been in the works for quite some time. Look for our beers to start making their way around better known beer bars and beer focused restaurants in San Francisco starting in September.

We have a tasting room in the same building as the brewery and will offer tasters, pints, and growlers. Some beers may be bottled further down the line but for now it's all draft. The only way you can take our beer away is in the form of a growler - which by the way, is a great way to drink beer!

Look for a focus of plenty of hoppy beers, belgian-style saisons, dark beers, and sour beers. We are huge fans of wine and bourbon barrel aged beers as well so it's only natural for us to have a barrel program. Think bourbon barrels loaded with big chewy imperial stouts, excessively hopped IPAs, fruited sour beers, and funky saisons. This is what we love. This is what we are all about. We hope you are too!

Bottle pours out cola brown topped with a small tan head. Nose is sweet caramel toffee pitfruit malts a little brown sugar and a nice bourbon barrel treatment. Taste is more of the nice sweet malt combo pitfruit and the bourbon barrel vanilla notes.

Can (1/2/24) pour from Valley Beverage. Opaque dark yellow with nice sparkle, cap of head with fair retention and tons of soapy lacing. Aroma is strong grapefruit, herb and nectarine. Taste is strong nonspecific fruit (lychee?), light cooking herb and malt. Smooth, frothy texture, average carbonation and finish as taste. Aroma is juicy (though herb in there as well) but taste doesn't match it.

The nose shows moderately intense notes of pineapple, pine resin, and light pine.

The palate is well carbonated and medium bodied. Pine resin forward with a pine like prickliness and a very mild bitterness on the end.

Poured from a 375 ml bottle. Aroma is fairly chocolate forward with bittersweet and milk chocolate notes. Lighter notes of dark caramel and toffee with lighter roast and hints of ash. Light fruit notes of prune and raisin. Light bourbon and alcohol notes with faint oak. Pours jet black with a medium sized, thick, dark mocha head that recedes steadily to a small film that lingers on the edges. Flavor is fairly sweet with lots of chocolate, dark caramel, toffee and Tootsie Rolls. Lighter notes of toasted bread, burnt sugar and roast. Hints of ash, leather and vanilla. Faint raisin and prunes notes, but not as strong as in the aroma. Medium bitterness and medium light alcohol notes. Light bourbon and hints of oak. Mouthfeel is full body and fairly sticky with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a solid BA imperial stout. Nice malt profile, especially in the aroma. Perhaps a bit too sweet and sticky for my preferences. It doesn't seem like the barrel really comes though either.

Poured from a 16 oz can dated February 05, 2024. Aroma is fairly hop forward with notes of grapefruit pith, tropical citrus, passion fruit and dank, pine resin notes. Light cracker malt notes and a bit of alcohol as well. Pours a very clear, golden yellow with a medium sized, moderately thick, white head that recedes somewhat quickly to the edges where it lingers in clumps. Flavor is slightly sweet with medium light cracker malt notes. Moderately strong bitterness and light alcohol notes. Moderately strong grapefruit notes with lighter orange, passion fruit and pine resin. Hints of berries as well. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid IPA. A nice West Coast bitterness and hop profile with a malt notes that is light but strong enough to carry the hops. Pretty crushable but strong enough that you might regret crushing too many of these.

Poured from a 16 oz can dated January 29, 2024. Apparently they have updated the recipe so this is a bit different from the older ratings. Aroma is hop forward and dank with lots of gooseberry, passion fruit, berries, tropical citrus and some dank, resin notes with a touch of cat piss. Light cracker malt notes and hints of alcohol. Pours a rather clear, brilliant, yellow-gold with a medium sized, thick, frothy, white head that recedes steadily to a small film that lingers on the edges. Medium lacing and faint legs. Flavor is slightly sweet with medium light cracker malt notes. Fairly strong bitterness and light alcohol notes. Moderately strong hop notes of gooseberry, berry, grapefruit pith and dank resin notes. Lighter notes of passion fruit and tropical citrus. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid pale ale. Really nice hop notes in both the aroma and flavor with tons of nelson character. Malt profile is light but big enough to carry the fairly strong hop bitterness and alcohol notes.

16 oz can pouted, picked up at Special Brews. Mildly cloudy, light golden appearance. Fading head. Dank grassy hop nose, some onion and a little melon. Flavor is cool, refreshing, and almost juicy. Melon front, with some mango like notes. Lingering bold bitterness, citrus rind. Really tasty.

Can from Ale Arsenal to glass. Pours clear light gold with moderate off-white head. Aroma and flavor are dank with citrus hops. Everything here seems in moderation.

16 oz can poured, from Special Brews. Clean and clear, lighter appearance, golden color, loose head that fades. Citrus, oily hop bill. Grassy onion hop nose. Moderately bitter hop bite. Super mosaic showcase, and it's an awesome flavor profile. Cool finish. Very tasty brew.

On tap at Oakland CHoP. Aroma is malt forward and rich with lots of layers of dark, rusted, rye breads, molasses, burnt sugar, dark caramel and toffee, burnt sugar and notes of dark fruits. Hints of chocolate and roast. Fruit. Medium light bourbon notes with hints of oak. Medium light alcohol notes. Pours black with very dark brown hues on the edges and a small, mocha head that recedes quickly to the edges where a faint film lingers. No lacing and sheets of alcohol. Flavor is very sweet with lots of dark caramel, toffee toasted rye bread, crackers, molasses and burnt sugar notes. Lighter notes of dark fruits, chocolate and roast. Medium high bitterness and moderately high alcohol warmth. Light bourbon notes and hints of oak. Mouthfeel is full bodied and a bit silky with low carbonation. Low astringency and medium high alcohol warmth. Overall, a really solid barleywine / munichwine. Really nice, complex malt notes in the aroma and flavor. Solid barrel character that really works well with the malt notes. Alcohol is very present but well carried by the malt profile and body. It's full bodied but not sticky.
