Since launching in early 2018 we have grown and adapted our setup to form a small but tight-knit team of six running the day to day operations of the brewery – Founder Sean, Head brewer Lally, Assistant Brewers Scott, Guy and Matt; And head of sales Arron.
Our motto is to never stop improving; we’re always learning and tweaking our beer designs to create the best beer we possibly can, packaged into only kegs and cans to optimise freshness and keep our beer tasting as fresh as it does from the source.

Nose is bitter orange, grass, pine needle, grapefruit, citric tinged straw.
Taste comprises orange pith, grass, pineapple, mandarin, pine nip.
Medium bodied, fine carbonation, semi drying close punctured with light juicy come grassy hop bitterness.
Tidy DIPA.

440ml can. Jet black colour with minimally late awakening, small, creamy, diminishing, minimally lacing, dark brown head. Roasty, chocolately, dark malty, slightly spicy, rye malty and fruity aroma, notes of dark chocolate, chocolate sponge cake, cherry, cherry liqueur, cinnamon. Taste is sweet-, chocolately, dark malty, caramel malty, fruity and spicy, notes of chocolate cake, cherry, cinnamon, cherry liqueur, some caramel.
Oily to viscous texture, smooth and soft, slightly cloying palate, fine, soft carbonation.
Very nice composition, tremendously spicy, super tasty - great!

440ml can. Clear golden with a white head. Aroma of orange and grapefruit, piney, resinous, a bit of caramel and biscuit. Taste is as they promised, old school C-hops prominently showing orange and grapefruit, citrus peel, pine, very resinous, a touch of sweetness from the malts, mostly caramel, biscuit there too, finish with a strong lingering bitterness. Medium bodied, crisp, clean.
A cracking westie, they don't do many but it's best one I've had from Polly's I reckon.

Keg draught at the Castle, Leicester. Burgundy and only slightly opaque with a full pink head. Light cherry aroma, not very much here at all. Tart cherry taste but not a lot of oomph. Tastes almost watered down but what isbhere, well, it's nice. Gentle bitterness on the tongue. Light to medium body, good carbonation but kept in check. Probably the worst Polly's beer I have ever had.

Can. Just a light haze on this gold beer, small bubbly pale cream colour head. Light smooth palate, a very mild dryness, decent fine minerally carbonation. Light smooth pale malts, a mild creamy sweetness. Cooling pine. Bright citrus peel with a little citrus peel bitterness. Bright citrus, reasonably juicy. Trace of modern Simcoe pineapple. Struggling to pick up El Dorado. Juicy mandarin on the finish. Love the concept of these beers. Less East Coast sweetness and yeast, less West Coast bitterness. Something in-between. This could have been a bit crisper for me but, taste wise. Spot on.
