Description
We are artisan producers at the heart of Somerset’s cider-land making whole juice sparkling cider by the old English method of keeving.
Apples are collected from traditional cider orchards in and around the parish of Pilton and slowly fermented for six months in our cool Victorian cellar before bottling.

Bottle at home, from HOTM online, 14/02/21. Almost clear orange amber with a decent white cap. Nose is toffee apple, oak, faint grape must, tangy apple skins, light sugars. Taste comprises glazed apples, caramel, oak, tannins, apple skins, residual sugars, mellow red grape notes. Medium bodied, fine carbonation, crisp drying close. Solid flavoursome stuff.

750ml wired cork bottle from Pilton. Sparkling golden colour, short-lived white foamy head and aroma of mellow juicy apple, earthy hint. Taste is mellow, tart, fruity, slick, apple, with funky solvent hints and an oaky smoked note. Smooth mouthfeel, medium bodied, fine carbonation, drying woody tannic & smoke hint at the finish. Nicely drinkable.

75cl bottle. Misty gold appearance. Great natural keeved fruit aroma. Overall character presents excellent woody coarse keeved fruit, with a soft tannic feel. Lusciously fruity and wonderfully drinkable. Here's to 10 more years of Pilton.

Devine ba. Wouldn't be able to place the whisky but it isn't a peaty one but light like Oban. Some glorious caramelisation. Oak. Wood. Pears. Dry tartness. Moderately puckering. Champagne perry. Stunning.

750ml capped bottle from Pilton. Opened with a pop. Hazy deep reddish plum colour, short-lived pink foam head and aroma of plum, apple, barrel. Taste is slightly tart fruity plum, some sweet juicy keeved apple cider notes and dry islay whisky wood barrel with a slight phenolic note. Medium bodied, spritzy carbonation, drying finish. Interesting flavour combination, very drinkable.

75cl bottle to celebrate our 3rd wedding anniversary. But opened 2 weeks late as I was ill! Deep hazed red appearance. Pinkish white head. Aroma has cherry, almond, vanilla notes. Fuzzy textures on the palate, cherry is prominent, alongside some sherbet dib dabs and almond notes, fine carb, subtle tannin. Pretty interesting. Seems to be more of a cherry wine than a cider, though the keeved cider notes offer a welcome tangent.

Bottle from Systembolaget. Somewhat winey apple smell mixed with comforting bubble bath. nice fizz. You do really get the whisky in the immediate aftermath of a sip, mixed with sticky apple. Yummy.

750ml bottle from Pilton. Opened with a pop. Reddish-purple colour, short-lived white foam head and aroma of cherries, apple, slight herbal note. Taste is tart, cherry, apple, fleshy, with some light herbal hints. Medium bodied, soft to medium carbonation, dry tart fruity finish. Nicely drinkable.
