Description
We are artisan producers at the heart of Somerset’s cider-land making whole juice sparkling cider by the old English method of keeving.

Apples are collected from traditional cider orchards in and around the parish of Pilton and slowly fermented for six months in our cool Victorian cellar before bottling.

750ml bottle from Pilton. Yellow golden colour, short-lived fizzy white foam head and aroma of quince, fuel, solventy. Taste is sweet and tart, mellow and astringent, quince juice and vegetal, fruity and fleshy, woody and solvent hints, with some underying quincey fruitiness and sourness. Oily mouthfeel, medium bodied, low to medium carbonation, dry fruity quincey sourish finish. Very sippable.

375ml bottle. Clear golden yellow appearance, strong riesling like aroma, petrol, rich quince. Taste brings a blossoming array of vibrant quince with an oily wine-like palate. Exceptional crystal clear quince notes. Excellent sipper.

375ml bottle, 2016 vintage. Pours dark ruby brown with zero carbonation. Aroma is strong, musty apple, a little caramel and acetone. Taste has lots of tannins and toffee to start with a very sweet toffee apple finish.

Sample thanks to Danlo: Poured a ruby red with no head. Aroma is apples and berries. Taste is apple, tannin, blackcurrants, and mushy apple finish.

29/4/2020. Sample courtesy of danlo, cheers Ed! Pours clear pale golden amber with minimal head. Aroma is light funky, caramel, apple and leather with a slight vegetable and celery edge. Medium sweetness and light tartness. Moderate body. Dry and astringent finish. Liked it.

75cl bottle on a baking hot lockdown evening listening to 6 music. Vivid clear pink, thin ring of bubbles atop. Lovely blackcurrant aroma with some rich keeved fruit just peeking through. Taste is crisp, deeply fruity with plenty of blackcurrant berries, the mandarina seems to boost these flavours nicely while the mosaic adds a nice citrus air. Crisp, gently sour edge really brings it all to life. Really excellent cider, thoughtfully conceived.

750ml wired cork bottle from Pilton. Opened with a small pop. Bright clear red colour, pinkish-white foam head that dissipates to a thin rim and aroma of citrusy resinous hop. Taste is sweet, mandarin citrus, hoppy, with barrel notes, formic hint, then tart fruity blackberry and apple. Medium bodied, spritzy carbonation, dry tart & tannic finish. Nicely drinkable.

5L BIAB from Pilton online. Golden amber colour, no head and aroma of smokey hint, apple, caramel, funky. Taste is sweet, juicy apple, crispy smoked bacon (!) notes, caramel funky, solvent hint, and mellow soft tannin. Medium bodied, low soft carbonation, medium lightly tart fruity finish. Very drinkable.
