Description
Established as the Matthews Brewing Co in 2005 by Stuart Matthews and Sue Appleby in a farm workshop estate in the village of Timsbury, a few miles outside Bath. Using the best ingredients such as Maris Otter malt , this small 5 barrel brewery soon became known for its distinctive, uncompromising ales.

Taken over by Dawkins Taverns and name changed in January 2010. The Brewery moved from Timsbury near Bath to Bristol in 2016.

Closed May 1st 2023 due to cost of living crisis.

On keg at the brewery during the East Bristol Brewery Trail. Light hazy orange with a dense lasting off-white head. Aroma is light fruity, floral. Taste of light tropical fruits, grainy malts, light pine, moderate bitterness. Light-medium bodied, soft carbonation.

Cask at steel coulson, leith. Pours hazy golden with a thin white head. Sour lemon and light malt bag on the nose. Taste id's sharp sour lemon, acetic. Not good.

Keg at steel coulson, leith. Pours black with a thin tan head. Funky and sour aromas, some rum, light chocolate. Taste is sour, mote dark chocolate and rum notes. Not sure about this.

Cask @ Ring O'Bells, Halifax. Golden-blonde with a thick creamy head. It's a hoppy session ale, certainly in its nose, with a mild fruitiness in its taste.

Cask @ Royal Oak, Halifax. Very dark with a creamy off-white head. It's palatably smoked in both aroma and taste with ham flavours here. It has an easy enough drinking texture for a dark ale, but gets dense in its aftertaste with mild vanilla.

Cask at Seven Star. It pours hazy golden - orange with a medium white head. The aroma is fresh, bright, oily, tangerine, soapy and brioche. The taste is drying, chalky, earthy, grassy, soapy citrus, earthy, tannin, leathery and peppery spice with a drying finish. Light and fine carbonation. A bit drying and soapy. So-so.

Dan's Stag. Seven Stars. Bristol. Cask. Hazy gold beer, decent pale cream colour head. Palate is airy and dry, reasonable fine carbonation. Dry and fairly grainy malts. Tired orange hops, quite pithy. Little apple. Dry finish. Meh.

Cask at the Seven Stars - Bristol. Pours clear orange-gold with a frothy, pure white head. The nose holds fresh citrus, grassy hops. Light sweet flavour with assertive grassy bitterness, some palegrain, lemon peel. Light bodied with fine carbonation; good condition. Finishes with sturdy bitter grass and citrus peel, some pale bread, a little yeasty dryness. Alright.
