Description
The Wild Beer Co was born in 2012 out of a love of fermentation, barrel-ageing and most importantly, flavour. We believe exceptional brewing stems from imagination and passion. Our beers are brewed using modern creative techniques and ingredients while producing some of the world’s oldest beer styles guaranteed to give you a memorable drinking experience.

Curious bought Wild Beer Co out of administration in a deal that involved the beer brands and intellectual property of Wild Beer Co, but not its Somerset-based brewery production facilities. The Curious and Wild Beer Co businesses were transfered into the hands of St Peter’s in 2023.

Bottle from Cotridge wines. Peppercorn, mushroom, earthy aroma. Hazy orange white head. Bready, mid sweet. Orange dank. Not classic saison esters. Palate is a bit flabby. Could be dryer.

Sampled @ RBESG 13 Grand Tasting. Hazy yellow colour with a full sized white head. Smells herbs, spices, rubbery and malts. Tastes herbs, spices, malts and fresh. Medium body and soft to medium carbo.

Sampled @ RBESG 13 Grand Tasting. Clear orange colour with a small white head. Smells slightly sour and fresh. Tastes watery, malts and slightly sour. Very thin body, soft carbo.

Draft at Churchkey, thanks to Travlr. Poured a hazy light orange color with a pillowy white head. Aroma was barnyard, spice, light floral notes. Flavor was white pepper notes, citrus, funky notes, straw grains. Pretty refreshing and enjoyable.

Draft at Churchkey. Cloudy yellow orange color, massive white head. Aroma of barnyard, haystacks, white pepper. Taste is funky straw, light citrus. A proper saison.

Bottle. Pours a black color with a small tan head. Has a roasted malty coffee and licorice aroma. Roasted malty coffee, chocolate and licorice flavor. has a roasted malty coffee and licorice finish.

75 cl. bottle sampled @ RBESG 2013. Thx! to chriso & Boudicca. I quite like the lable. To the Goddess… New Zealand hops, apple juice & wild yeast + champagne yeast, sounds more than interesting. Hazy orange with a creamy white head. Nose is light yoghurt, touch lactic, dash sour, light apples & sour malts. Taste is an not entirely successful mishmash of spoiled yoghurt, wild farmhouse stuff, rotting apples, fermenting berries, bitter barnyard, some hay, spices. Thick yeast & malts body. Going by the two Wild Beer brews I have had so far, the ideas seem wonderful the results do still leave quite a bit to be desired.

75 cl. bottle sampled @ RBESG 2013. Thx! to chriso & Boudicca. I quite like the lable. Lightly hazy orange, only bubbles on the side of the glass. Nose is weak, lightly metallic, touch yeast, faint barn & some spelt,… Taste is sweetish, malts, touch spelt, hint lactic, mellow, light bitter spices, hint barn,… Lighter bodied. Not too impressive. Weak, messy in not the best way. Still nice to try one of these.

75cl Bottle at RBESG ’13 Grand Tasting. Hazy golden yellow colour, white head. Aroma of coreander, almost soapy or shampoo-like, wheat. Flavour is light tart, spicy, wheat, herbal dry bitterness underneath, grape, quite a bit of carbonation. OK.

Torst, Brooklyn tap ($7): Pours an orange color with a white head. Aroma is really heavily sorachi ace, lemon, and a tiny bit of funk. My girlfriend didn’t think that this was a saison when she first smelled it. In any case, it basically tastes like a saison base with a huge amount of sorachi ace hops, so lemony butterscotchy taste. Good for what it is. Also, this is my first English saison...
