he Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

Inky hazy purple color. Big cherry pits, vanilla, nice oak notes. Modest tart lots of cherry pits. Very dry. The vanilla, cherries and oak linger. Great

Sampled from the bottle at Tørst. Pours a clear pale straw yellow with a white head that dissipates quickly to the edges. Aroma has dry tart fruits with an oaky sherry and light funk supporting. Flavor has a nice sherry and tart fruit combination with an acid bite backing.

LCI 7 Feb. Nectarine flesh, but nice dry clean crisp bite, that not overripe moment where there’s a real crunch and the pit comes out super clean. Lasting tart funk. Elegant.

From tap at BeerTemple, Amsterdam. Citrussy aroma with lemon, funk, sour yoghurt, wheaty notes, grass, some pineapple, minerals. Flavour is nicely tart and medium sour with a dry finish. Nicely sour and funked up, excellent Berliner.
