Making craft beer is a time consuming but exciting process, which requires knowledge, passion, care and creativity. Everything is based on a constant research and selection of quality raw materials, then the brewers decide which beer will be produced in terms of style, taste, colour, abv, etc. After the recipe is designed, the brewing process can start. Malt is milled and it’s mixed with water in a process called “mash”. Next step is “lautering” and then “boiling”. Afterwards wort is cooled and moved to fermentation tanks where yeast is added. After 4-6 weeks beer is ready to be kegged or bottled. Every single process is under brewers control, supported by our chemical analysis laboratory. Currently our brewery can produce more than 4000 litres per day.

Old rating from Mar 2017 - A 330ml bottle brought home from my Tuscany trip - It pours a clear brown/black colour with a small tan head. Aromas of sweet malt, caramel, bread, cereals & yeasts. Tastes of caramel, bread, cereals, dark toasted sweet malts, dark fruits & yeast. Soft carbonation, full bodied. Light bitterness with a dry bittersweet finish.

On tap at Lambrate - Golgi, pours black with a small tan head. Aroma is very rich, with huge bourbon notes, vanilla, and dark chocolate. Flavour is complex and refined, with lots of dark dry cocoa, huge bourbon, and vanilla. Not too heavy on the palate, yet very densely flavoured. Excellent.

On tap at Lambrate - Golgi, pours a clear pale golden with a small white head. Aroma is intensely hopped, with plenty of resinous and piney hops, citrus, and a lightly sweet malt base. Flavour follows accordingly, with potent piney hops, resins, and crisp biscuity malt. Powerfully hopped and expertly balanced. Excellent.

On tap at Lambrate - Golgi, pours a clear blonde with a small white head. Aroma is lightly floral, with gentle straw, and toasted grains. Flavour is dry and bitter, with straw, toasted grains, and some bittering hops. I’m not really getting a very pronounced flavour profile. Just finished bitter, dry and crisp. It’s alright.

On tap at Lambrate - Golgi, pours a clear golden with a small white head. Aroma has gentle straw, biscuity malt, and soft grassy hopping. Flavour is punchier, with grassy hops, light Saaz-like spiciness, straw, and a crisp crackery malt base. Clean and well-brewed. Solid.

On tap at Lambrate - Golgi, pours a clear golden with a small white head. Aroma has lots of grassy hops, straw, and biscuity malt. Flavour is crisp, with lots of straw, grassy hops, and crisp crackery malt. Crisp, well-hopped and clean. Well-made.

On tap at La Fine Mousse, pours black with a small beige head. Aroma is full of dark sugars, cocoa, vanilla, and a touch of oak. Flavour is like liquid tiramisu, with plenty of dark sugars, vanilla, cocoa, and a bit of oak. That’s as close to tiramisu as I’ve had in a beer. Impressive.

Tap at Beerselection. Pours hazy golden with white head. Nose is light sourness, a sweet fruity touch, citrus zest. Taste is lightly sweet and rather tart first, pretty fruity altogether, then comes a zesty, citrusy, somewhat bitter touch that lasts well into the finish. Light body, soft to average carbonation, easy to drink. Tasty.

On tap at Uiltje Bar. Jet black, beige head. Nose is moderate smoke, woods, earthy notes, some very dark chocolate and coffee. In taste it’s less smokey and more coffee and earthy, still very pleasant. Medium bodied with long, bittersweet finish and average carbo. Good un.

Bottiglia ABV 7.0%. Il gusto al naso propende per orzo tostato e caramello. L'olfatto viene stimolato in maniera è elevata e il modo in cui permane è apprezzabile. Il cappello di schiuma ha una buona tenuta. La grandezza delle bollicine è medio-fine. Il liquido è di aspetto nebbioso e anche qui la grandezza delle bollicine è medio-fine. La carbonazione è nella norma. Il colore è ramato. Il corpo è rotondo. L'amaro è di media potenza. La forza gustativa è normale. La continuità gustativa è sufficiente. Le sensazioni boccali finali risultano di pronta beva. Il finale è amarognolo e un po' ruvido. Al palato arrivano note di caramello, miele, frutta secca, pane tostato, erba e agrumi.
