COTSWOLD CRAFT BEER SINCE 1994

Using traditional methods our beers are brewed in small batches, and our Head Brewer Colin Williams oversees every aspect of the process. From the milling of the malt, the boiling of the hops, to the filling of the casks – everything is lovingly crafted to ensure that our beers reach you in perfect condition. Each beer recipe is known as the Grist. Colin and his team come up with the recipes, using over 20 years experience they work out the perfect blend of malts, hops and other ingredients. The night before a brew, the appropriate amount of malts are weighed out and loaded into the hopper of our vintage mill.

(Cask at Olutkellari Helsinki on 2009-05-05) Golden and clear. Small white head. Malty and yeasty aroma. Medium bodied and harsh palate with little carbonation. Malts, sweetness, boiled vegetables, hops, grass, bitterness, yeast and light fruitiness in taste. Bitter aftertaste.

Cask at Gilford Arms Edinburgh ... copper ... thin tan head ... sweet malt nose ... musty fruitys ... some toffee .. some citrus and light toasted oats in background.

Bottle. Dark golden colour with an off-white head. Aroma is sweet, malt, caramel, hop. Flavour is sweet, malt, caramel, hop. Bitter finish. Pleasen and easy drinkable beer.

Bottle. A clear, dark golden beer with a clear, off-white head of small size. The aroma has a nice resiny hops on a sweet, toffee-ish background with bready notes. Caramel, pleasant citrusy and resiny hops, fruityness and a nice bitterness in the mouth. Medium to full-bodied and a pleasant carbonation. Pleasant finish with bitterness and malty sweetness. A really pleasant and easy drinkable beer. (081206)

From cask at Three Judges. Pours clear and golden orange with a small white head. Light caramel malty aroma. Sweet malty flavoured with a light roasted breadish note. Smooth and easy with only a light bitterness. Smooth and lasting malty finish.

Cask-conditioned at the Bag ONails, Bristol 13/11/08. Amber with a decent, off-white head. Sweet fruity aroma. Flavour had plenty of sweet malts, with a short bitter finish. Ok.

Half cask ale at Cask & Barrel in Edinburgh where it was served at the very right drinking temperature. Light amber body. Low, white head. Grass-hoppy aroma. Light caramel malts in flavour mixed with hints of dried fruits. A brief touch of bitterness in the ending. Dry in the mouth. Medium to thin palate (23.10.2008).

Pale looking ale with a tight, creamy head. No notable aroma, taste a little thin, hops evident and some fruit and bitterness but not really robust enough, although would make a pleasant session beer (wasn't on a session unfortunately!).

(Cask at Pullman Bar, Helsinki, on 2008-10-24) Dark amber. Clear. Hardly any head. Light malty nose. Dry medium bodied palate with very little carbonation. Malts, bitterness, fruitiness and hint of sweetness in taste. Quite bitter aftertaste.
