COTSWOLD CRAFT BEER SINCE 1994

Using traditional methods our beers are brewed in small batches, and our Head Brewer Colin Williams oversees every aspect of the process. From the milling of the malt, the boiling of the hops, to the filling of the casks – everything is lovingly crafted to ensure that our beers reach you in perfect condition. Each beer recipe is known as the Grist. Colin and his team come up with the recipes, using over 20 years experience they work out the perfect blend of malts, hops and other ingredients. The night before a brew, the appropriate amount of malts are weighed out and loaded into the hopper of our vintage mill.

Cask gravity @ Reading Beer Festival 2008.Clear light to medium yellow orange color with a small, virtually none appearance, virtually none lacing, fully diminishing, white to off-white head. Aroma is light to moderate malty, caramel, toffee, moderate buttery. Flavor is moderate sweet and bitter with a average to long duration. Body is medium, texture is oily, carbonation is flat. Bottle. Very dark brown with a small off-white head. Fruit and caramel in the aroma. Dry with roast malt and caramel flavours.

Bottle @ thewolf-and-his-flock-of-sheep tasting session. Clear brown color, short head. Aroma of malt, roasted, bit coffee, rye. Soft fruity and malty taste. Hint of blackcurrant. Quite nice.

500 ml bottle. Reddish, dark copper body with a thin beige head. Very nice aroma of roasted malt, coffee and caramel. Flavor is sweet roasted malt, fruity, coffee and a good bitterness. A pleasant and well-balanced porter.

Bottle@TheWolf. Pours copper/amber with a off white head. Aroma is mild of chocolate & dried fruits. Body is medium to weak. Drinkable but nothing speciel!

[on draught at the 3B’s, Reading] Poured a golden colour with a moderate, very white head which slowly reduced - appearance of a pilsener (my friends actually said "how come you’ve bought a lager then?"). The carbonation is pleasantly soft. A sweet malty aroma and foretaste were quickly overtaken by a soaring bitterness with oaky overtones, reminding me more of an IPA than a bitter. I’m not usually a fan of very bitter ales, but this one worked really well for me - a very refreshing summer ale; great work guys.

500ml bottle from Tesco. Dark brown with a slight tan head and moderate carbonation. Aroma had some roastiness, chocolate and raisins. Slightly oily mouth feel, with flavours of milk chocolate, coffee and a decent bitter finish. Very good.

Cask-conditioned at the Bag O’Nails, bristol 1/4/08. Deep gold colour with a decent white head. Aroma was pretty fruity with some apricots, mandarins and earthy hops. Flavour had some sweet biscuit malt before an enjoyably bitter finish. Good.

500 ml bottle, courtesy of Cardinal Pub & Bar, Stavanger. ABV is 4.0%. Amber coloured beer, large off-white head. Moderate aroma of hops with a little malts, toffee and fruit. The flavour has decent hops and a little toffee and nuts, on a tolerable malty base. Dry and slightly woody finish.

500 ml bottle, courtesy of Cardinal Pub & Bar, Stavanger. ABV is 5.3%. Black colour, moderate to low greyish brown head. Nice aroma, some roastiness, coffee and chocolate, hints of tobacco and dark fruits. The flavour is moderately roasty, coffee and chocolate again, with a slight fruitiness. Smooth and pleasant to drink.
