Description
Our beer is brewed across two sites. The first is our original brewery at the Old Flax Store, this is where we began our journey in 2014, and is home to our LDS tap room. We expanded into our second much larger brewery, Sydenham Road, in April 2017. Between both sites we can brew up to 18 beers at a time.
The Old Flax Store is a Grade II listed building located in Holbeck, the spiritual heart of the industrial revolution. In 2014 we turned this derelict mill into a brewery, tap room and events space. This building is home to our first brewery, which takes up the ground floor of the building. Our second brewing site is also located in Holbeck, half a mile away at Sydenham Road, where 8 x 100HL conical FVs enable our total capacity at this site to reach 24,000HL.

Northern Monk Trio With Snooker - I sink the beers, they sink the balls, brew #3 of 3. A black coloured pour with a somewhat boozy aroma and taste. After enough sipping its chocolate gets a look-in, although is never dominant in any area. It has quite an enjoyable smoothish texture though. Possibly the most apt of the beers for watching the baize sport, as I've seen plenty of blacks going in the hole today.

Northern Monk Trio With Snooker - I sink the beers, they sink the balls, brew #2 of 3. A hazy golden second of the evening, which although is citrus based has quite low citric impact. Despite grapefruit being prominent in here, there's no real bitterness to be found, so it actually comes across somewhat sticky-sweet in design.

Murky yellow colour and small white head. Overriped sweetish tropical fruits in the nose. Medium-bodied. Overriped tropical fruits, odd canned peach, stonefruit flavour. Ok not yur standard dipa. Probably not in top condition.

The aroma is full of citrus zests and resin. Medium body and carbonation, expressive, with a long, dry, slightly tart finish, but lacking any solid grapefruit or pine bitterness. Dark, opaque, with a thick, beige head. The taste is similar to the aroma, with citrus, pine, and subtle cocoa notes lurking in the distance. Pleasant, very drinkable, with the alcohol well-hidden.

Can from Tesco. Pours opaque orange with an orange tinted head. Aromas of apple and orange. Taste adds mango juice. The apple is oddly prominent. Not sure about this.

440ml can. Poured a murky dark brown colour with a shorr-lived, fizzy tan head. The aroma is roasty, caramel, chocolate. The flavour is moderate sweet, with a smooth, sweet saccharine, chocolate, light liquorice bitter palate. Medium bodied with lively carbonation. Sweet but not sickly sweet. Somewhat light and fizzy. Not great attributes for a big boozy imperial stout.

(Draft at Gollem Amstelstraat, Amsterdam, 28 Feb 2026) Black colour with frothy, beige head. Malty, roasted nose with chocolate, coffee and cinnamon buns. Malty, roasted taste with notes of coffee, chocolate, cinnamon, caramel, vanilla, cinnamon rolls and a mild cacao bitterness. Almost full body, quite sweet. Rich, tasty and warming. Surprisingly good balance. Great beer! (Rating #16.000)
