Flaska från Etre Gourmete. Svart opak vätska med lågt beige skum. Rostade aromer av kaffe, mörkt bröd, choklad. Rund munkänsla, stor kropp, medelstor sötma med fudge och choklad, men också torrare, kärvare ganska hårt rostade smaker med medelstor beska. Bra balans. Gott.

330ml bottle. Opaque, mahogany colour with small, frothy, half-way lasting, minimally lacing, dark beige head. Sweet-ish, sugary, dark malty and fruity aroma, notes of dried fruit, notes of dried fruit, raisin, some milk chocolate, rock sugar, orange, orange zest, a touch of white pepper, liquorice. Taste is sweet-ish, minimally sugary, dark malty, zesty, citrusy, notes of dried fruit, raisin, hints of milk chocolate, rock sugar, a touch of orange, orange zest, vanilla, liquorice, some alcohol, bitter hoppy counterpart. Seemingly relatively light and in fact relatively drinkable due to the above-average hop bitterness. Not fully convincing.

Flaska från Etre Gourmete. En disig nästan mjölkig gulaprikos vätska med lågt smutsvitt skum. Doft av surdeg, kalk, citrus, jäst, vete, lagerblad. Syrlig med mycket citruskaraktär, tuggig vete, bröd, jäst, omogon banan. Ganska långt från stilen, drickbar och trevlig men kanske en lite oren svavelton i all grumlig jäst. Ok+

1 February 2020. At Brugs Bierfestival. Cheers to Anke, Kevin, Niels & Cynthia! Hazy yellow, unstable, frothy, white head. Aroma of banana, ripe yellow apple, apricot, lime, sorbet, melon. Taste has sweet banana & apricot, rather 'Belgian' yeasty character, yoghurty backbone with sour & spicy accents. Dryish, floral hoppy finish, lingering yellow fruit, citrus, yeast & a hint of jenever alcohol. Medium body, oily texture, soft carbonation. Refreshing but less convincing than Siphon's new Derby beer.

1 February 2020. At Brugs Bierfestival. Cheers to Anke, Kevin, Niels & Cynthia! Hazy dark brown, lasting, small, foamy, beige head. Inviting aroma of granola, biscuit, toasted coconut, milk chooclate, coffee & cream, caramel sauce. Taste has sweet chocolate & biscuit topped with coconut flakes, touch of vanilla & toffee, slightly herbal & toasty with a strong 'granola' malty backbone (nuts & raisin). Dryish, earthy-herbal hoppy finish, lingering toffee & coconut with decently warming whisky alcohol. Medium body, oily texture, soft carbonation. Very pleasant surprise as it takes the supple maltiness of a Quad and mixes it with characteristics one might find more quickly in modern-day Stouts. All the elements work well and despite the ABV it's easily drinkable. Only now do I notice the reference to the Bruges football derby (Club Brugge - Cercle) but even as an FCB fan, I'm at a loss as to what the implied link is.

33cl bottle from Abeervinum, Rimini, Italy. Pours dark brown/purple, practically black, with light brown, very fine foam. Aroma is smoked, coffee. Body is fairly dense, with moderate carbonation. Taste is moderately sweet, with medium roasty bitterness. Final is fairly long and roasty.

Clear dark brown beer, small creamy beige head, unstable, non adhesive. Aroma: lots and lots of coconuts, sugary impressions, nice roast, dark chocolate, very nice! MF: ok carbon, medium to full body. Taste: ok carbon, medium to full body. Taste: lots of alcohol, coconut, more alcohol, sharp and alcoholic, little bitter, malty, some grains. Aftertaste: alcohol, bit sugary, soft roast, some coconut, bit sugary, caramel, nice stuff!

Bière d'hiver, cette quadruple de la brasserie Syphon intégrant vanille et orange, si elle m'a réchauffée m'a quelque peu troublé avec des arômes fumés arrivant sur le final, pas du tout adéquats et laissant une touche dissonante en bouche. Le sucré aurait également mérité d'être restreint pour mettre davantage l'accent sur l'alcool, à 10 %, bien en place et structurant bien la quadruple, (quoiqu’un peu faiblard sur le final) et pour lui donner davantage de puissance. Le visuel est honnête avec un brun soutenu (EBC de 68), sans mousse. Le nez est sur le caramel, le candy, un alcool affirmé, l'orange et la poire et plus généralement de fruits confits. La nille est subtile, tellement qu'il est compliqué de la déceler. Cela restera vrai à la dégustation qui débute par une attaque ronde, où l'on retrouve les arômes présents au nez avec quelques épices (provenant du houblonnage en saaz et goldings, avec un IBU de 50, bien jaugé). Belle présence en seconde bouche, avec un alcool qui de plus s'affirme sans dénoter, donnant une belle expression de quad. L'arrière, stable, est d'une bonne tension sur l'alcool, pleine et un peu plus épicée. L'alcool faiblit tout de même quelque peu sur le final, qui est long pour autant, mais sur lequel arrive des arômes de fumé, incompréhensibles, pas du tout dans l'histoire de cette quad et qui nous laisse sur une mauvaise note. Il aurait fallu tronquer cette Tronk à la deuxième bouche.
