Description
Founded in 1988, Brasserie Fantôme has gained international attention and a cult following among lovers of craft beers. Owned and run by Dany Prignon, Fantôme is known for its unique variations on the Saison style of farmhouse ale, often involving the use of herbs, spices or fruit juice. Within the craft beer community, Fantome saisons are considered highly desirable and have developed a significant audience in the United States and United Kingdom. Ironically, while their complex, earthy, and herbal flavors have caused them to be sought out by connoisseurs outside of Belgium, Fantôme's products are difficult to find and not well known in the country of their origin.

Bottle for Christmas, thanks Fin and Loz! Amber golden, strong white head. Funky, bretty, yeast, pear, herbal. Soft, mellow, surprisingly tame mouthfeel, with pear and pear rind coming later; some good edge, warm and strong booze. Still quite drinkable.

This is from 2016 correct? Sample NYE 2025 (that is, 12/31/25, heading into 2026). Poured a brown cloudy murky color but managed a small short lived head. The crown popped revealing there was still some pressure in the bottle. However, the carbonation was quite soft and minimal in drinking so I think it had lost something there. Had it held up otherwise? Not quite. Definitely some sherry and cardboard notes in here, mixed with a a general malt forward beer, some fruitiness, leaning toward bruised apples, figs. Not sour or funky at all. Strength was apparent, there was a light booziness at the finish and trying to drink all of the 750 was not gonna happen! I think there was something good in here, but perhaps it was never great?

750ml bottle. Rather low carbonation. Lemon lime tone. Mellow rye tone. Lowest ABV beer I've had from them. Coriander is really nice. Grows on you a lot as you sip it. Rustic medium bodied rye. Really good unique.

Bottle. RAD Beer. Nice to see some Fantome back over here. Behaved itself on opening. Sits hazed gold. Solid white swede. Unmistakably Fantome on the nose. Soft spice. Pepper and maybe some lime leaf. Who knows. Taste is semi sweet with a light dryness and a light bitterness. Spicy yeasty finish. Easy drinking affair in really good nick.

750ml bottle. Not super chocolate forward, quite mild, distant. Chili peppers are the same, but have a little more presence, giving some mild heat in the finish, sort of replacing a hop balance. Great mouthfeel, medium bodied. Some wheaty tart funk, big "Belgian" aroma. Overall kind of and odd, earthy, funky creature. Not really chocolate flavored, which is OK.

Bottle. Color: Clear amber, beige head. Aroma: Malty, spicy and caramel notes. Taste: Malty, caramel, dark malt, hints of nuts and banana esters, spicy notes. Hoppy backbone, light hints of citrus. Moderate to over moderate sweet, light to moderate bitterness. Medium body, just below average carbonation. Dry finish.

Poured light golden in color with a white head.
Lovely pear nose, light funky, somewhat sour with more sweet pear flavors. High carbonation. Long finish. Lovely.
