Description
Hill Farmstead Brewery is the culmination of many years of travel and insight—of experience and education—of friendships and explorations. The brewery is the revival and continuation of 220 years of Hill heritage and hand crafted history in North Greensboro, Vermont. Its logo is retrieved from a sign that once hung in Aaron Hill's (our great(x3) grandfather) tavern, just up the hill, in the early 1800s.

2023 bottle pour at the brewery, 1/19/24. Undetermined clarity. Dark. Thin ring of tan bubbles. Lovely mix of chocolate malt, actual chocolate and spicy bourbon. There's a sweaty, rich, savory funk to it (hard to describe it well). Really rich, bourbon forward but not boozey, tannic or hot. Richly-malted, more chewy than syrupy. Soft chocolate malt, tons of actual chocolate with earthy, lightly roasted character and plentiful vanilla. Spicy bourbon is rich yet mellow. Juicy almost. Great balance of malt and yet not too sweet.

750mL bottled 7/9/15, drunk with Nelson on 6/3/16.
Big white head despite the dandelions (which I would think would inhibit retention/formation). Blonde-golden body with a touch of deeper brass and a high clarity.
Divine nose blooming with heavy, heavy minerality. Is this a glass of wine?? My mineral descriptors aren’t very good, but this is bursting with well water and white Burgundy wine notes. Light to moderate souring agents show through, as well as a delightfully dainty black pepper phenol character. Soft wheat and/or base malt delicateness behind it adds very light biscuit/cracker. Just incredibly understated with light floral notes on the finish and no alcohol or flaw.
The flavor mirrors the aroma, lending floral notes to the stone-like minerality and with yeast (and maybe the dandelion?) adding very easygoing, mildly tart nectarine/unripened apricot. Very low sweetness, but plenty of body, with a tight carbonation, as always and peppery phenols on the end. Really the perfect storm of fruity esters, tart acids, pepper phenols, minerals and biscuit/cracker/honey-like maltiness. As with many of their beers, they grow on you considerably during the course of the bottle and by the end you’re left pretty stupefied at just how subtle and good the beers are. A great beer, right up there with my favorites (Ann, Anna, Art, Norma, Edith, Clara....)

2018 bottle at Tørst, 2oz for only $12! Undetermined clarity. Ring of tan bubbles. Smells rich, bourbon (salt, char, peppery) and port (strong, dry, moderately acidic grape, chalk). Maybe the port wins out, even. But bourbon not far behind. Stout character is full of deep chocolate, light caramel and vanilla. Plenty of raisin and prune, no alcohol. Soft, almost juicy sweet, wow...that's wild. Succulent prune, raisin, toffee, vanilla, tobacco and mega soft bourbon spice and mild grape on the finish. Again, as in aroma, the port is stronger than the bourbon. But that's fine, I think it's more interesting that way. Good attenuation, excellent malt depth. Well-rounded, no alcohol. Peppery bourbon lingering.

Can shared at craft beer junction bermondsey tasting. A hazed golden orange coloured pour with a loose white head. Aroma is lovely, white grape, nz hop, dank creany wheat. Flavour is composed of semi sweet oily hop, nz, white grape, melon, petrol. Palate is semi sweet z creamy. Moderate carbonation. Nice.

Can at CBJ Tasting. Hazy-opaque gold. Foamy white head. Aroma is fruity with some sweetness. Flavourwise it has stone fruit with a bitter.edge. Light-medium bodied. Slick. Soft-fizzy carbonation. Long dry somewhat astringent finish.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks. A hazed orange brown coloured pour with a a loose fine beige head. Aroma is lovely jammy fruits, bruised grape, brown sugars, light spicy. Flavour is composed of, semi sweet, white port, tawny port, jammy fruits, brown sugars, toasted malts. Palate is semi sweet, oily, mellow alcohol warmth, moderate carbonation.

Bottleshare at CBJ. Thanks to Wingman for the can. Just a light haze on this gold beer, small pale bubbly pale cream colour head. Airy palate, smooth, reasonable fine carbonation. Airy pale malts, a forward creamy sweetness. Hops are ... underwhelming... Soft pine. Modest ripe fruits, slightly candyish citrus and stone fruits, mild tropical fruits. Airy finish. Hype.

Bottle at CBJ Tasting. Opaque dark brown. Thin foamy beige head sticks to the rim. Aroma is fruity, malty, boozy. Flavourwise it's then tangy and boozy with citrus sourness older caramel and dough malts. Light-medium bodied. Slick to oily. Soft-fizzy carbonation. Long dry somewhat astringent finish.
