Description
Hill Farmstead Brewery is the culmination of many years of travel and insight—of experience and education—of friendships and explorations. The brewery is the revival and continuation of 220 years of Hill heritage and hand crafted history in North Greensboro, Vermont. Its logo is retrieved from a sign that once hung in Aaron Hill's (our great(x3) grandfather) tavern, just up the hill, in the early 1800s.

On tap at Doc Ponds on 11/02/2017.
Poured into a tulip.
Appearance: dark yellow to orange haziness with a finger's worth of white foamy head which settled off nicely to leave some light lace
Aroma: gooseberry to tangerine to peachy to piney and mango-like hoppy tones with a super light clean malt backbone
Flavor: meshes the prior noted aromas to a superb sweet to bittersweet quality emphasizing the berry notes and seems to add in a little bit of blueberry sweetness; finishes slightly danky to berry to peachy toned
Texture: medium bodied; leaning into being a sipper; great smoothness along the tongue with nothing distracting; nice low carb and low hop bitterness assertiveness
Overall: an extremely well done NEDIPA I would welcome again.

Hazy, golden-orange colour with a creamy warm, off-white head, good retention and creamyish-foamy lacing. The Motueka releases tropical fruits in the nose, with a touch of lime-mojito and some light grassy, dank hoppiness. This continues into the flavours, with a drying, grassy finish that lingers, blended with the fruitiness. A somewhat creamy mouthfeel with the dryness building nicely. An interesting Double NEIPA with the citrus, but balance with grassiness, to not be overly fruity, juicy.

Just came back from my 2026 Vermont Easter trip, so might as well go through some bottles I have from previous years - at this brewery. Written 20240328 on the label. A slight haze, golden colour with a creamyish warm-white head, good retention and foamy lacing. Citrusy aromas of the Saison, with added limes to accentuate the sourness, zestiness. Especially in the flavours. Not overly puckering, but a sour note lingering more and more as you sip. A touch of tart left on the tongue. Quite a refreshing Saison, with the limes that shine.

Bottled 11/15/15 and drunk 5/22/16, shared by AdamC, thanks!
Dark ebony with some muted mahogany hues on the edges. Seemingly good clarity with a tan head atop that is medium-sized and fades quickly to cover.
Vanilla and cinnamon are easily picked out of the nose, as a dark chocolate backdrop keeps things "dry" and very porter-like. I honestly get more house yeast character than anything, and thankfully, the coffee is nice and restrained, adding only a light amount of roast. Biscuity, chocolate-laden malts linger, with more cinnamon spiciness and no alcohol or flaw.
Lots of cinnamon in the flavor, drying things out considerably, with spicy vanilla quite apparent as well. Dark chocolate, very light roast, bits of prune/plum and very low sweetness on top of a medium-light body with low carbonation. It’s drinkable and nicely attenuated with no forceful malt sweetness or alcohol, but I could do with less cinnamon and probably less vanilla, even granting that this is a holiday spiced porter. Otherwise, nicely done and surprisingly light.

750mL growler filled March 1, 2926, drunk April 5, 2026.
Rich adjunct integrating pretty well with deep, fat, fudgey-sweet malts. Barrel is evident, as with the others I've had in the series, but very much in the background. Which is fine; not every BA beer has to be stuffed to the brim with barrel character. Vanilla and coconut notes take front seat, with the fudgey notes, and coffee is minimal. No alcohol noted. Barrel shows spicy bourbon and light fruitiness with a touch of spirit. It does smell like it's going to be on the sweet side, just hoping there is good balancing acidity and bourbon/wood character.
Hey, that's not so sweet! Significantly less so than 5 and 6, anyways. Excellent barrel character showing big spice and warmth. It helps dry as does the bigger coffee presence in the flavor. Coconut is fruity, sweet and rich but not as prominent as the nose. It all comes together pretty nicely and the big, thick malts tie it together. Not syrupy, though! Hill seems pretty committed to avoiding that current trend. A nice mix of more contemporary pastry imperial stout character (sweeter, thicker, more adjunct forward) but still retaining Hill's more traditional, elegant treatment of the style (still more dry than most in the style, not in the 15-18% abv range, doesn't bludgeon with fudge, alcohol, barrel). Nice. After the slightly disappointing VH 5 and 6, this is a welcome surprise.

50th anniversary gift from my friend Marty - who lives close-by the brewery. Lightly hazed, bright golden-yellow colour with a white frothy head, decent retention and wet-soapy lacing. Funky aromas with a touch of sourness, apple cider vinegar and apples. The apples notes come out a little more in the taste, with a soft sour feel and hints of the wine-fruitiness lingering. The honey is well-hidden, as not overly sweet. A wet mouthfeel with a tad dryness, tartiness. Everything is well-balanced here, with nothing sticking out like a sore thumb. Quite a refreshing funky ale with the soft wine barrel aging.
