We have always been driven to craft the best beer we can, and (in our opinion) the true challenge, consistency. Constant innovation is exciting and engaging, but consistent core beers that you can always depend on, is a challenge that equally drives us.
Our approach to beer development is different than most. We outline the desired finished product, it’s appearance, aroma, mouthfeel and then reverse engineer the ingredients and processes to get our desired final product. Knowing and understanding not just individual ingredients characteristics, but how they interact with each other make this possible.

On tap at 7 Seas - Tacoma, pours a deep dark mahogany with a small tan head. Aroma brings out pungent earthy hops, light pine, and medium toasted malt. Flavour is reasonably balanced, with a nice big roasted malt base which makes way for big earthy and resinous hops. Big and bold, with great balance on the finish. Excellent.

On tap at 7 Seas - Tacoma, pours black with a medium tan head. Aroma brings out dry roasted malt, some earthy hops, and a touch of bone dry cocoa powder. Flavour is smooth and roasty, with a real solid roasted malt character, a hearty oat character, and dry cocoa. Love how roasted and dry this is. Excellent.

On tap at 7 Seas - Tacoma, pours a clear golden with a small beige head. Aroma brings out bready English malt and some faint toffee notes. Flavour is clean and smooth, with a nice English bready malt character, light toffee, and the slightest of hop content. Smooth and drinkable, with a very malty but fairly dry finish. Good stuff.

Clear pale blond beer, big aery white head, unstable, falls down quickly, a bit adhesive. Aroma: pretty malty, grains, hay, a bit floral. MF: ok carbon, medium to light body. Taste: malty start, grains, hay, bitter, pretty metallic, cow fodder, wort. Aftertaste: grains, hay, metallic bitterness, cow fodder, malty, a bit fruity.

Waxed bomber from Tavour. Pours dark, nearly opaque mahogany with a tan head that fizzed away. Aroma of very roasty malt, brown sugar notes, rye spice notes and hints of non-bourbon booze. Full bodied. Flavor is sweet demerara sugar, heat, rye spice, and something other than rye in the whiskey sense. Not dry, but not sticky (close tho). Balance from heat and rye spice. Extremely good flavor.

Waxed bomber from Tavour. Pours dark brn/blk with a foamy dark tan head. Aroma of nice bourbon, chocolate, dark fruits and burnt/toasted malt. Med plus body. Flavor is burnt malt bitter, nice bourbon, chocolate, wood notes and hints of dark plummy fruits. Not at all dry. Heat at a quite acceptable level. Bitter - but not identifying hops. Smooth and very pleasantly enjoyable.

Can from the Seattle Beer Company. Pours clear copper with a huge off-white head. Orange aroma wafts from the pour. Med body. Flavor of fresh citrus and mildly roasty malt - like SN Pale Ale. Almost juicy. Fairly dry. Nicely bitter. A touch of earthiness. Excellent.

Can from the Seattle Beer Company. Pours hazy gold with a creamy white head. Aroma is juicy - white berry and melon. Near medium body. Flavor is juicy - mixed tropicals - mainly melon and citrus. A little earthy. For me is not close to dank, but it does approach luscious.
