Description
The Bruery® is a boutique craft brewery based in Orange County, CA, specializing in experimental and barrel-aged beers since 2008. Founded as a small, friend & family run business, The Bruery takes it’s unique moniker from founder Patrick Rue’s family surname.
Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

From tap at the brewery. Pours hazy dark orange with a table off-white head. Aroma is dense caramelish, roasted breadish malt and with a light alcohol bite. Light metallic and yeasty touch. Thick creamy mouthfeel. Dense caramelish and light spiced yeasty base flavour. Light sharpness from the alcohol and dense caramel flavours. Smooth finish yet with a vague burn. Slight sticky final texture.

From tap at the brewery. Pours cloudy dark brown with a tan head. Smooth caramel malt arma, roasted and light bourbon smooth note. Smooth caramelish dark flavoured with a light bitterness and smooth bourbon note coming through. Roasted and slight bitter finish with a slowly emitting bourbon touch.

From cask at the brewery. Pours hazy pale pink with a small white head. Aroma is light malty, milky and raspberry crisp fruity. Tart and light milky flavoured with a light raspberry refreshing fruity note. Lasting light sour flaour mixed with the raspberry refreshing note.

On tap at the Bruery. Pours with a large brown head over a black body. Alcohol legs, brown coating and lace all left behind on the glass. Aroma of tar, chocolate, vanilla, bourbon, dark fruits, and caramel. Taste is dark fruits, tar, bourbon, oak, candi sugar, plums, tobacco and bitter chocolate. Extremely long duration. Super viscous mouthfeel, light carbonation, amazing! Hides alcohol immensely well, does not taste or go down like 19.5% (not even close)! Really looking forward to the bottles. Fantastic beer.
Having had this multiple times now, and have liked it better each time. I cannot think of any imperial stout that comes close...one of the best beers I have ever had.

Red waxed bottle number 2378. Pours with no head over an amber body with some alcohol legs. Aroma of alcohol, brandy, char, brown sugar and butterscotch. I could sniff this for a long while. Holy **** this stuff is nuts! Burnt nuts, brandy, caramel, raisins, bread, alcohol, oak, cocoa! Beautiful light burn. Syrupy, mouthcoating and great! I have corked the bottle, and been savoring it over the last several nights.

On tap. Opaque, warm orangey brown with a creamy light brown head. Intense aroma of caramel and Bourbon. Very full-bodied, lots of caramel, wood and vanilla. Has a warming alcohol burn in the finish. 060709

On tap. Pours a slightly hazy dark amber with a firm and creamy beige head with good retention. Intensely sweet aroma with lots of caramel, wood, Sherry and alcohol. Very full-bodied again with woody notes and hints of Sherry. Extremely warming alcohol in the finish. Nice one. 060709

On tap. Pours a hazy cute pink with a creamy and vaguely pink head. Very fresh raspberry aroma. Light body with a discreet carbonation and a soft mouthfeel and a distinct lactic tartness combined with a light berry sweetness. Quite refreshing. 060709

750 mL bottle from Whole Foods Market, Bowery NYC. Brought back by a friend. Thanks! Shared at Immy’s Backyard Throwdown. Pours a dark brown color with a large head. Good head retention and lacing. Aroma is bread, dark chocolate, caramel and coffee. Taste is dark chocolate, bread, spice, coffee and nutty notes. Full bodied.
