Bottled 10/15, drunk 12/22/15.
Crystal clear copper-bronze body is topped by a large white head that immediately fizzles to nothing, thanks to the herbs. So how do you rate that? Obviously herbal oil is going to impede head retention but what’s the point of giving it a low appearance score because of that?
Pineapple, chocolate, mint, basil, light lactic character, a good dose of butyric acid and bready malts.
Mint, basil, chocolate, delightful lactic character but more butyric acid, as well. Why is there so much god damned baby diaper here??? The mint tries to clean it up, but fails. Mint, thyme, basil, light bread, a bit of metal, i dont know. Definitely would like to like this more than I actually do. Just a bit unsettling with the sulfur and baby diaper. Not particularly tight carbonation, with a dry, watery, texture. A bit oily. 6/4/6/3/11
Bottle, batch 3 or 4, July 2018, drank 8/31/18.
Much better than I recall, almost certainly due entirely to having no bottling issues. The carbonation is on-point, no weird oxidation, watery character or dullness of aroma or flavor. Quite tart and moderately minty, with a moderate lactic presence and strong, soft malt texture for mouthfeel and balance. Tight carbonation and good attenuation. Lovely. Rating is updated to reflect this most recent batch.

Bottle, batch 1, drunk 12/15/15.
Pale golden body is topped by an initially large, white head that shows moderate to moderately-high retention. Good clarity, with only a gentle haze to it.
Smoke in the nose is immediately followed by heavy dough. Not the good type either. Just a very pervasive smell of unbaked bread dough with yeast freshly added. The smoke is gentle, dry and very tastefully done, but the doughiness nearly ruins the nose. Not much else gets through, perhaps a bit of lemon and light vanilla character.
Much better in the mouth, however, as notes of lightly tart lemon, soft, dry smokiness and creamy wheat all come together harmoniously. Still some definite doughiness on the finish, but it’s far less problematic in the flavor than aroma. Carbonation is moderately tight, though showing a bit of looseness and making for a rather watery texture overall. But that’s fine and the beer is obviously intended as a very quenching, session/table beer. A bit of earthiness and dried herbal quality from the hops, but I certainly don’t get any of the pine from the commercial deScription (which is a good thing, as that would be very out-of-place in this beer). Along the lines of Oxbow’s Bowie, but the heavy doughiness/raw yeast from the nose really knocks it down quite a few notches. Would love to try another bottle in a month or two to see if this character goes away, though I’m not sure I’ll have the opportunity.

Beer Table, NYC tap in a minigrowler: pours a light piss color with little head. Aroma is mint and herbs. Taste is minty with a light apricot touch to it. Pretty light. Aftertaste is minty. Tasty.
Earlier Rating: 10/16/2015 Total Score: 3.1
The Well, Brooklyn tap: pours golden with a white head. Aroma is light farmhouse and slight mint. Taste is basically a light saison with some light mint. Not great. I was expecting somethinng a bit better.

Bottle shared at the Nov. 2015 Monticello Dairy tasting. Hazy yellow, thin head, poor retention. Aroma of doughy malt, lime, hints of salt. The taste is lime, salt, pale malt. Reminds me of tortilla chips. Medium bodied, high carbonation.

Draught at Row 34, 11/13/15.
Light-to-moderate haze to this soft blonde colored liquid, with a very light lime tint to it. White head is small and fully diminishes over time.
Fruitiness (limes, lemons, sweet orange) and plentiful but not overdone lactic character all smell very gose-like in the nose. Dainty malts show light honey and baguette character, while no flaws or alcohol are noted. The lime is certainly prominent, though by no means dominant/disruptive. No flaws or alcohol.
Less lime in the flavor, even, with tart lactic notes playing quite nicely with the lightly sweet malts. Delicate citrus character as well as a pinch of graininess dry out the finish, but the tight carbonation and saltiness add some slickness/smoothness and it goes down both dry, flavorful and still texturally enjoyable. Light lemongrass and coriander notes add further complexity. Thought the lime and herbs add a different but equally enjoyable dimension to the Alternate World (which I assume is the base beer here).

Draught at Publick House, 10/26/15.
Medium gold liquid has light carbonation apparent. Ligjtly hazy with a small white head that remains at cover for a few minutes.
Yes. More sorachi ace. Faint sugary whitebread and honey back the hops that certainly do their thing. Nothing terribly off the beaten path here and the hops hold most of the Belgian character at bay, though the fruity esters mix nicely with the hop character. No alcohol, no flaws.
A bit sweet and almost mosaic-like at first. Some bitter, leafy, earthy hop notes combine with white bread and biscuits. Low to medium low carbonation is mostly tight, but could be increased. Sorachi flavors are true and enjoable but the saison character is pretty lacking. Seems like a sorachi pale ale with light Belgian chatacter. Which is fine.

Well, there’s no way to sugarcoat the appearance here. This looks like someone pissed in a glass and handed it to you. Little/no carbonation visible, a slight glassiness to it, but otherwise clear with no head, no bubbles, nothing. Golden, average-hydrated urine color. Could see giving it a 1 for appearance, but that dosent really accomplish much.
Moving on, it shows light graininess in the nose combining with light lactic and hard water notes (heavy mineral). Not much of a nose, though being served in a shaker isn’t helping things. Really just various dry grains, light vanillin, low on esters, though an afterthought of yellow fruits and apples No alcohol or flaws.
Upon first sip, it shows an odd, fizzy carbonation but it’s not altogether loose or overly watery. Sour yeast/lactic notes with lots of sour apple, some tart cherry, cranberry even. Just a plethora of dry, tart fruitiness, with plenty of grainy, cereal-like character, very little sweetness and just a hint of honey-tinted vanilla-like character on the finish. More cereal character as previous renditions contained, though I don’t think this one has the clear macro lager similarities, rye producing quite a bit of a different flavor than spelt. Drinkable and quenching, with no major problems, but tighter carbonation and just a touch more body would do wonders here.
