Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

330ml bottle from Cave a Bulles, Paris. Pours a nice mahogany brown with a pine / dark caramel nose. Has a pleasant jammy hop sweetness that refuses to dominate, with an old oak bark bitterness and a few dusty forest leaves. Has a modest alcohol taste, well-balanced flavour and is exceedingly drinkable considering the ABV. Wouldn’t mind another really.

330ml bottle. Hazy reddish dark copper colour with average to huge, frothy, half-way lasting, minimally lacing, off-white head. Piney, herbal and fruity hop aroma, hints of orange, pomegranate, nectarine, orange zest. Taste is bitter hoppy on moderately sweet caramel malty basis with a mild nuttily and almond touch, fruity and slightly floral notes, zesty. Relatively light body for an IIPA.

On tap @ Borefts 2013. It looks really really dark in the glass this one. As good as black really and the little head it once had disappears quite quickly into a bubbly dark sidesticking film. The nose has lots and lots of coffee sweetness. Mocha and lactose with some roasted elements. Smells like it has a gliding mouthfeel, and it really does. Soft prickling on the carbonation. Can't really sense the higher alcohol content here. Well, it's there but it's superb camouflaged. Chocolate plates and coffee making the main ingredients in the taste. Ends soft dry om the tongue with a lingering chocolate aftertaste. Absolutely decent. 28.09.2013

On tap @ Borefts 2013. Looking nice in the glass with a really lacing brown head on top of a deep dark brown body. Smells of light grains and a little chocolate I think. Kinda sweet as well. It's mildly oily in the mouth and soft on the carbonation. I like the taste. Really round with a little fruitiness. Not much point in looking for the oysters cause I can't find them anywhere. Ends really drymouthing and almost a bit astringent wit a little bit of coffee. 27.09.2013

On tap at La Fine Mousse, Paris on 28th November 2013. Hazy amber with a part-lacing off-white ring & film head. Herby grassy hoppiness in aroma. Intensely bitter and grassy in-mouth. Satisfyingly bitter finish with increasing intensity at each sip. Crisp mouthfeel and light body. Perfect for such a low strength beer.

330ml bottle. Hazy amber colour with average, thick, frothy, half-way lasting, moderately lacing, white head. Fruity, hoppy aroma, nectarine, peach, a touch of bitter orange, some pine. Taste is initially simply flat bitter hoppy, later cautiously fruity undertones (nectarine, bitter orange) are overlaid by some grassy hop and bitter, medicinal notes. Still OK.

330ml bottle. Quasi black colour with average, firm, frothy, fairly lasting, minimally lacing, tan head. Roasty dark malty aroma, malt-spicy in Maggi direction. Taste is dry, roasty dark malty, subtle residual sweetness; smooth palate.

330ml bottle. Cloudy darkest brown colour with average, creamy, fairly lasting, moderately lacing, beige head. Herbal, earthy hoppy aroma, hints of juniper berry, background-ish dark malty aroma with a coffee touch. Taste is herbal, earthy, bitter hoppy, dry dark malty.

Clear black colour, off-white head. Aroma of chocolate and roasted malts. Bitter hoppy flavour, malts, caramel. Bitter finish, caramel and coffee.
