Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

330ml bottle. Black colour with late awakening, very small, creamy, diminishing, minimally lacing, tan head, a thin layer remains. Condensed dark malty aroma, notes of chocolate, molasses, treacle, vanilla, a touch of liquorice and soy sauce, cautious hints of peat. Taste is initially moderately sweet dark malty, notes of treacle, molasses, some chocolate, switches later to more dry and roasty dark malty with bitter hoppy overtones, some warming alcohol in the finish; soft carbonation. A plethora of flavours, nevertheless relatively light and narrow - can’t believe in the 13%.

Bottle at home, 15th February 14. Pours quite dark, lovely floral aroma, taste is clean and sweet with good bitterness, a joy to drink, and did not taste like 8%. Very decent

Bottle at home, 13th February 14. Nice floral aroma on opening, taste is bitter, good malts, slightly watery, palate is ok, not spot on. Not bad

Bottle sample at a tasting at Mastikim. Thanks Dagan. Dark brown to black. Nice aroma with tropical fruity hops and mild roastiness. Flavor has some roastiness, a nutty note, fruity hops and a finish with pleasant lingering bitterness, hoppy and burnt. Medium-bodied. Very nice.

330ml bottle. Clear, bordeaux-red colour with small, late awakening, creamy, half-way lasting, moderately lacing, off-white head. Malty aroma, a perfumed fruity touch, hints of leather. Taste is dry vinous, fruity, hints of red currant, notes of leather; lasting finish, sticky palate.

330ml bottle from Cave a Bulles. I don’t often give a beer massively high ratings, but for this one I really find it hard to fault. Beautifully fresh aroma with a rosy dark red / brown appearance. Lusciously ripe fruity hops with some pine and a slight dryness on the finish. Perfectly blended, fantastic IPA.

Draft @ ML Fontainas. Orangée, col blanc crémeux et épais. Arôme est super fruité surtout au niveau tropical avec des notes de pêche, feuilles vertes rappelant un peu l’Amarillo/Simcoe. Palais est léger, plein de bonnes notes agrumes et tropicales rappelant ici la mangue, pamplemousse et pêche. Amertume est bien présente mais bien balancée surtout pour une bière à 2.5%. Malgré la charge fruitée je note aussi un léger côté pin-sève bien agréable. Malt reste modéré et arrive juste en fin de bouche, fini donc sec et poussiéreux. Ce dernier enlève un tout petit peu de l’onctuosité des houblons.

Bottled, from La Cave à Bulles, Paris. Lightly hazy copper colour, small head. Aroma of cocoa. lemon yoghurt and caramel. Fairly sweet with full body and soft mouthfeel. Nice, mouth filling mature port-like caramelly flavours. Mid bitter finish. Well made.
