Batch 1, 12oz can, canned 1/31/25, drunk 5/7/25.
Cherry-raspberry red, good clarity. Large, pinkish head, moderate retention.
Fruity, well-aged Brett mixing with round, well-aged fruits showing minimal acidity and plentiful juiciness. Good balance, with fruit not overdone, allowing saison yeast room to move.
Fruity, juicy, playful with a malty but perfectly-attenuated texture and tight carbonation. Love it all here - the excellent saison yeast character that isn't crude or Americanized, the lower acidity and tasteful fruit character. And this was canned about 4 months before release; the mark of a great brewery (conditioning their bottles and cans).

Sampled from the tap at As Is. Pours a clear deep amber with a light brown head that dissipates to the edges. Aroma has bread and some dark grains with just a bit of roast coming through. Flavor has earthy grains and bread with just a hint of dark cookie backing.

Sample at the roost pours a deep brown with lots of creamy gray head. Nose is malty and nutty, sweet bread and dark bread, earthy. Flavor falls off a pinch, malty and earthy, bread, some caramel but lacks the complexity of the nose. Finishes nice, soft and fluffy.

750mL bottled 6/1/2023, drunk 5/3/25.
As pictured.
Whew, yeah, that's a lot of poop! But excellent minerality with tasteful grape additions. Tart and with rich wheat and chewy neutral wood.
Tart and fruity with rich grape, and yet surprisingly not too much acid. Not as barnyardy in the flavor. Intense, though, with lots of personality. Good body, good wood structure and good attenuation. Could age this for another five years without batting an eye. As with real lambics, im sure this would age well for many years beyond that.

Bottle shared by Clarkvv --thanks, Clark! Lightly hazy amber with slight reddish hue, ring of head and no lacing. Aroma is strong tart fruit over barnyard, old book. Taste is strong tart fruit (back of the mouth puckers) over any sweet fruit, dried dog excrement. Smooth texture, fairly thin, soft carbonation and finish as taste. Some barnyard here but mostly tart avoids sour or too poopy. Well made.

750 ml bottle. Crimson in color. Aroma is barnyard and minerals. Flavor is cow dung, old basement, funky red grapes. Lightly sour, the bacteria does give a lot of barnyard. The grapes do balance it to a point.

Thanks Clark, aroma is poop, grapeskin, tart jammy fruit. Flavor follows with more tartness than acetic.

Brewery cask! 4/24/25.
Clear blonde-brass. Small, white head.
Big mineral. No toast, caramel, resin...some perfume and rustic grain. White bread and light citrus lingering.
Light citrus juice with white bread and biscuit. None of the soft, overly juicy, fruity notes of an NE, but none of the garbage of a WC. Just regular fruits, moderate bitterness, biscuit and white bread.
