Appearance: bright yellow to semi-bronze in color with a one finger white foamy head which slid off nicely to leave just a touch of spotty lace
Aroma: clean woody to grassy tones, subtle lemon rind, hay/earthy toned, subtle apple and tart & funky character
Flavor: clean tart and semi-sour to deicately funky through the lemon rind, apples, hay and woodiness; sly aftertaste of lemon, hay, funk and green apples
Texture: light to medium bodied, seemed more of a sipper, dry-ish finish of woodiness, funk and tart
Overall: this is a very nice grissette worthy of returning to

Appearance: bright yellow haziness, one and a half fingers of white foamy head which mellowly dissipated and barely left any head
Aroma: bright citrusy, floral and grassy to semi-tropical fruity hops take the lead while clean bready malts help to balance
Flavor: prior mentioned aromas blend nicely to full bittersweetness; mellow aftertaste of grassy/tropical and citrusy hops
Texture: light to medium bodied, some sessionability about it, low key hoppy astringency; delicate finish of floral, citrusy and grassy hop character
Overall: a very nice AIPA or NEIPA depending upon who you talk to. I'd bang again.

Smells moderately funky and not hugely acidic. There's an almost pale sherry note, or maybe just intense, dry white grape and mineral, mixing with soft oak and ample rustic grain. Surprisingly mellow, but it does have over two years of age on it in the bottle.
In the mouth it come out even better, and continues to evolve and improve with warming/breathing. Eventually it's incredibly flavorful, filled with complex wine, mineral, soft funk and mellow acids. Ample malt/wheat in the body with low oak and good dryness. Definitely something to sip on and ponder. Exquisite stuff with apparent but not overdone wine character from the finishing barrel.

750mL bottled June 30, 2023, drunk January 8, 2026, as pictured.
Luscious mix of Brett and lacto yielding honeydew melon and musty, cellar/basement funk. Honey-like malt and rustic wheat with a bit of lemony acidity on the end, as well. Very mild oak and no acetic. Good strength of aroma.
Light oak and malt contributing honey and vanilla notes. Musty funk with herb and pepper notes being quite prominent. Lemony acidity is nicely in check; nothing sharp or intense here. Brett dominates with mild, mellow lacto. If any complaint here, it's that this is TOO mellow. Would like to see a bit more funk. Texture is fantastic, though.

Bottle at home, been saving for sharing but with some reasons to be festive I just popped. Rose colored small head still body. Nose is wine grapes, funky cheese., grass and floral. Tatses of red wine, black currants, lemon, cheese, perfume, grass, woodsy. Quite tart and puckering gave me bit of heartburn. Overall delicious

Can thanks to my bro. It pours pretty black with lasting brown head. The aroma is dark roasted malt, charred vibes, rich coffee, espresso, toasted nut, cacao nibs, dark chocolate, nuttiness, praline and a touch of umami. The taste is dry, bitter, dark roasted malt, charred, umami, liquorice, slightly ashy, dark chocolate, cacao nibs, dark roasted coffee, espresso and a nip of booze with a dark roasted finish. Medium body and moderate, velvety mouth feel. A very solid coffee stout. Robust.

Bottle at home, pop something nice for thanksgiving night. Orange yellow colored brew with small soapy head. Nose is honey, wine, bourbon. Tastes of white wine, lemongrass, honey, bourbony vanilla, grains. Sweet and tart and savory. Interesting.

Can (10/15/25) from trade with ClarkVV--thanks, Clark! Deeply hazy dark yellow with thin head, trace lacing. Aroma is sweet stone, orchard fruit, milder musky herb. Taste is stone, orchard fruits, hint of herb and strong late malt with light bitterness. Smooth, slick texture, soft carbonation, fruity, malty finish with mild bitterness.
