Hello, we’re Thistly Cross, Scotland’s award winning farmhouse ciders, born out of a passion for making cider in the best possible way, combined with belief in the quality of Scottish produce, and asking ‘why not?’. Established as a collaboration between farmer, Ian Rennie, and artist-turned-cidermaker, Peter Stuart, in 2008, Thistly Cross has gained a reputation for making ciders that people rave about.

Bottle. Pours with a clear bright yellow hued body with some alcohol legs and a few rising bubbles that settle for a foamy ring. Aromas are mossy, a little bit musty, peat, very light scotch, vibrant apple, light campfire, medium acidity, dry with some earthy complexities and light sulfur. Flavors are Medium sweet, some bright juicy notes, dry and earthy notes with a rounded, light smokiness. Good acid balance for a medium sweet cider, lower tannins than I would have expected and thankfully less Scotch than I was expecting. Good body, lower carbonation. Smooth. Pretty nice stuff.

Refrigerated 0.5 cl brown bottle poured into a white wine glass. Pours clear pale golden with very small white head. Very little lacing, medium body, syrupy texture, light carbonation, and dry apple aroma. Taste is semi-sweet apple, hint of alcohol, and finishes dry. Pretty simple, pretty good, but the dry finish doesn’t work for me.

From cask at Caley Sample Room. Pours hazy to murky yellow with a small white head. Aroma is light cinnamon like spiced, herbal and citric apples. Sweet, citric and crisp fruity. Nice, mellow and yet with an edge, light sweetness and nice small notes of something hard to pinpoint, yet giving some complexity. Smooth fruity, sweet and light citric finish.

Canister. Sightly hazy golden colour, not much head. Aroma is apples, some wood, vanilla, cheesy notes as well as mild berries. Flavour is apple juice, cinegar, acidic notes and mild alcohol. Too acidic.

From a cider box at the Railway pub, Blackheath. Pours a clear yellow. Quite a smooth, crisp texture. Burst of baked apple in the flavour. Quite nice.

Pour is a clear yellow with no head. Aroma is a decent apple, sugar and honey. Flavor is also very nice. Fresh blast of apple with a little sweetness but nothing overpowering. Nice cider and I can’t get over how fresh that apple is in the flavor. Like right off the tree apple flavor.

Bottle from The Davis Beer Shoppe. Pours very light gold with a few bubbles. Very light and clean aroma of apple. Nothing cooked about it. Near med body. This is both tart and sweet. Pretty astringent. Yet it finishes almost sweet. Nice drink.

At the Mercat, Edinburgh. Pours a pale golden with gentle bubbles and no head. The nose is of sweet apples. The taste is definitely of sweet apples. The palate is light to medium bodied with light to medium depth of flavour and a fairly clean finish despite the sweetness. It’s ok.

Glad someone finally listed this, because all my emails just kept getting bounced back. Half liter bottle picked up for $6 @ New Beer. Left in the back of the fridge for a few months. Ommegang chalice. Clear, yellow gold body. Minimal activity. Smells of white wine, perry, & rubbing alcohol. A touch stuffed up. Taste is much more vibrant. Tart & meaty apples. Lots of waxy wood. Perry sweetness. A bit slick & alcoholic on the finish. Moderate carbonation. Low acidity. Solid stuff.
