Description
Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Sampled at the 2013 Chicago Cider Summit. Pours a clear yellowish gold with no visible carbonation or head. Aroma has a combination of sweet and tart pear. Flavor is much more musty with pear and has a bit of sweetness that comes out in the finish.

Sampled at Ft Wayne RB tasting - This cider has a rich, ripe apple aroma. It’s like it smells sweet, but it definitely doesn’t taste sweet. It’s pretty dry as the name indicates. It’s also light bodied and watery. The aroma is the best part.

Sampled at Ft Wayne RB tasting - This brew features a rich pear aroma. The flavor is sweet and watery. It has a light, thin body, no carbonation (intentionally a still perry or not?), and overall is just okay.

Bottle. Pours a clear gold with a white head that dissipates completely. Aroma has notes of sweet green apple with a strong oak, funky cheese and tannin backing. Flavor has sweet green apple up front with a bit of funky cheese with an oaky backing and tannins/smoked oak.

Wine glass. Clear, medium gold body. Spritzy.
Smell is very sweet pear perfume, hard water, yeast, & slight barnyard.
Taste is slighty tart & bittersweet pears, champagne grapes, & dusty yeast. Mild, herbal bitterness. Low to medium acid. Just a touch of funk in there.
Beaded, tight carbonation. Manages to finish just dry enough. Very easy.

Wine glass. Orange, disturbed, yeasty thick pour. Sizzling.
Tart, core, footy/cheesy scent.
Tastes of bittersweet apple peel, core, & pear-like florals. Chalky yeast. Minerally, very dry finish.
Tickly carbonation. Faint tartness. Moderate acidity. Lightweight.
Tasty.

Bottle @ The-Fest in Woosta.
Slight wink of carbonation. Pale, yellow citrus soda.
Twangy, cored, floral, flinty nose.
Tastes like hard water. Unintended flash of carbonation. Apples seem secondary. Bitter acid apples. Gently sour. Pith. Like drinking from a can. Sharp, woody & iron finish.
A kidney stone in every bottle!

Bottled@Euston Tap, London. Yellowish golden colour, small white head. Aroma is pear, mild vinegar, some nectar and mild wooden notes. Flavour is pear, some tannic notes, nice "cristalisation" when getting the mouth extremely dry.

Bottle @ home, picked up at Wilbur’s Foco. Very light whitish yellow appearance with a white head that dissipates quickly. Caramel, light butterscotch, pear, apple, vanilla aroma. Tangy, somewhat tart, butterscotch, dull pear flavor. Tastes a bit off but not all that bad.
