Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

From cask with a small white head. Aroma is crisp, dry and estery smooth fruity. Dry bretty and sulphorish. Smooth and fruity finish. Dry and sulphorish finish. Crisp hoppy and solid fruity finish.

Bottle shared at chriso’s Easter 2015 tasting - London. Pours clear gold with a foamy white head. Sweaty and funky, with lots of ripe apples. Light to medium sweet, with some musty farm, grass, dank apples. Light bodied with fine to average carbonation. Musty finish with mellow ripening apples, honey. OK.

750ml bottle. Clear orange golden colour, no head and aroma of apples, apple skins, barnyard, woody oak. Taste is tangy apple, apple skin, barnyard, rubber, woody, oaky, bittersweet with some lingering drying tannins. Slightly oily mouthfeel, medium bodied, low carbonation, dry tannic sour finish. Nice balance and very drinkable.

Sampled 500 ml. bottle as “At the Hop #3” at the Delft beer festival 28th June. Very thin white head. Clear light golden pour. Nice bitterness. Refreshing and easy drinking

750ml bottle. Clear golden colour, no head and funky apple aroma with rubber & woody oak. Tangy apple flavour, dry & bitter, with lots of woody oak, vanilla and barnyard notes, leather, rubber, hay, some tannins. Oily mouthfeel, medium bodied, low carbonation, dry oaky tannic slightly sour finish. Very drinkable.

750ml bottle. Pale yellow in colour with a short-lived fizzy white foam head. Aroma is juicy pear, syrup, melon. Taste is sweetish pear, fruity, pear skins, citric, slightly grassy. Light to medium bodied, spritzy carbonation, dry tangy finish. Quite drinkable.

750ml bottle, 6%. Deep orange golden colour, short-lived thin fizzy white foam head and nose of tangy apple, fruity, apple skin, rubber, wood, oak, funk. Bittersweet apple flavour with lots of woody oaky vanilla, plus notes of leather, rubber, band-aid, barnyard and light tannin. Light to medium bodied, spritzy carbonation, dry lingering light tanic finish. Nicely balanced and very drinkable.

500ml bottle. Sparkling gold colour, fizzy white head that quickly disappears and aroma of earthy apple, funk. Taste is sweet apple, juicy, wood oak, vanilla, some barnyard, bittersweet. Slick mouthfeel, medium bodied, fine carbonation, sweetish and dry woody oak finish. Quite drinkable.

330ml bottle. Gold amber colour, no head and aroma of apple, juicy, apple skins, wood & funk. Taste is tart & sweetish apple, rubber, funk, some tannin, and with lots of woody oaky vanilla. Slightly oily mouthfeel, medium bodied, low carbonation, dry clean sourish finish. Very drinkable.

750ml bottle. Golden coloured with no head, aroma is apple plus some woody oak and funk. Taste is fruity apple, bittersweet with oaky, barnyard notes and drying tannins. Slightly oily mouthfeel, medium bodied, soft carbonation, drying tannic finish. Nicely drinkable.
